Tonight and maybe tomorrow’s dinner. :crazy_face: … Been half Fasting, or basically doing extended OMAD’s, being around 30 hrs between meals the past couple days. - Ate a Salad, then the Wife was making some foods, but slowly, only using a couple pans. First serving of Haddock and Scallops. Then had another serving right afterwards. Was very good, but thinking of just skipping tomorrow or more. :slight_smile:

And what are we serving tonight???

Why… an appetizer of choice green broccoli bathed in a nutty brown butter, flavoured with
hickory smoked bacon bits and finished off with a light dusting of our finest sea salt. Bon Appetit!

Late Quick Dinner

Cheddar Sausage with Cowboy Candy, Salami, Pepperoni, Fresh Mozzarella Ball (only one), and Olives.

I had to go to San Francisco in the rain today to see a surgeon for consultation. It lasted longer than I thought it would, she seems like an excellent doctor. I was tempted to pull over halfway home to eat at an old Mexican place I used to haunt when I lived up the coast from Santa Cruz. But decided against it and spared myself the carbs and maybe vegetable oil. Just got a very low carb meal together at home a little late instead. Tasty and satisfying. :cowboy_hat_face:

This is probably my 6th take away in the last 2 years. Chicken Tikka balti Madras, with a side of chicken tikka just to make up the cost of free delivery! :joy: Just the job after a couple of busy shifts!

It was a little longer then 3 Minutes, but not much. Sorta had to wait for the Haddock to cook up, since it’s so thick. But worth the wait. :+1:

I’m very late to the chaffle party. I put some of the batter in a panini maker and then grilled two pieces with smoked salmon and Brie in the middle (the tiny square piece). I could barely eat half of this.

Prepping low carb goodies for tomorrow, the NY Cheesecake is just a family recipe I adapted (I think a slice would still be about 10-13 total carbs, it’s crustless, I don’t plan on having any myself, but if I did, it wouldn’t knock me out of ketosis so feel better about having it around lol), the cookies are from Texanerin.com the Coconut Flour Cookies (she recently updated this recipe with an option for using Lakanto sweetener, if you used Lilys chocolate chips they should be pretty low carb, our kids love them!

The kids have assured me that they are slightly crispy around the edges and totally chewy in the middle :blush: I think it may be from the coconut oil in the recipe…kind of caramelizes the cookie. I used to make them her Paleo version often before I went Keto and I was pretty happy that they liked this version and that they seemed to turn out the same!

Late Breakfast

Sausage, Scrambled Eggs with Turkey Liver, Green Onions, Garlic and Thai Chilies and Sour Cream.

I didn’t feel like eating till 12:30 today :cowboy_hat_face:

It’s the most wonderful time of the year. A pound of breakfast sausage, 1c each sharp white and extra sharp cheddar From the blocks, 1/2c fresh grated parmesan, and an egg. 15 minutes in a 350 preheated oven.
