Eric, I would love to see a thread in the food forum on the process you use to make your bacon! I wanted one of the pork bellies we recently delivered SO BADLY, but I really wouldn’t have know where to start with one if I had it. I’ll be watching!

There is a lot to read but once you have done this once it is easy. You have to use the online calculators for cure #1 weight and curing time.
My bacon has kosher salt, ground peppercorns, cure #1 (called pink salt but it has to be praguer #1 get it on Amazon).
I hang the bacon in an electric smoker and smoke at 225 till it gets to about 165F.
More this weekend after I have pictures.
Also I’m paranoid about spoilage so I use 175 PPM cure.
Also I think the yield is about 60%. SO 6 lbs from 10lbs of belly.
Mine too! If I had more patience I would pull them completely apart into 100 leaves to burn to a crisp.

I had the busiest day today at the Eye Clinic! I didn’t take a break, much to the bemusement of the people I was working with! Not one hunger pang. It took me an hour to get home with all the firework parties!
I did contemplate not eating but I had looked forward to eating my bacon and cambozola chaffwich!

My wife wanted ground beef, so she ate the last of it while I scavenged other meats.
It may LOOK like a turkey leg, but it was actually a really small duck. One thing I love about duck is that it’s is all dark meat … the breast / wing it’s ALL dark!!

Fireworks all over the place here too - but our local village bonfire night shenanigans aren’t until next Saturday, when it’s going to go absolutely b*****t crazy round here. I’m going to batten down the hatches, drink wine and avoid it all… #earlynight

I went to the community garden this morning again with Steven and his mom. I harvested a lot of Jalapeño peppers (new batch of cowboy candy coming!), some unidentified sweet and mildly hot lantern peppers, heirloom Plum Tomatoes (for sauce) and I cleaned a bunch of pears so another lady could use them for pear butter. I had a good time and also got some unbelievable Grape Tomatoes which I might be pushing the limits of ketosis with. It feels like a cheat eating them, so it probably is! But it’s the last of the season and I am eating them anyway….
Not been to the Lewes one since I was a kid, I’m glad to report! Too much noise and fire and danger for my liking. Probably still not setting foot outside the house for our village one, although the fire sculpture this year will be spectacular! Will get to see the photographs though. #wimp
