Cold morning out in the woods today… Came out and snacked on some Dungeness while the Wife made some Eggs and meats. Bacon, Sausage, Scrapple and Fried Eggs. … I’m taking the rest of the day off to relax, since I will off starting Wednesday, returning to work next Tuesday, after the Holiday.

Today we ate the last of our first batch of homemade bacon that we finished in April. It was so good. In an hour we will put up 20lbs of pork belly on cure for another batch. A friend and I are doing this and I will get about 10lbs of bacon. We will smoke the bacon with Hickory and Applewood on Thursday evening.

I’ve been a bit remiss with the photography this weekend! Last night I went to a friend’s for dinner. She did an early xmas dinner! Turkey, pigs in blankets, sprouts with bacon and a cauliflower cheese (probably not strictly keto but I had some!). I skipped the roast potatoes and Christmas pudding, but had coffee with cream and some 85% chocolate!
Today I cooked for Mum and her friend! We had roast chicken with an assortment of veg. Good for me and they were happy!
And I have just had some precooked chaffles that I popped in Mums toaster with butter and marmite! :yum:


I burnt them a bit but they were still good!

Made mexican chorizo, salsa verde, guacamole and keto tortillas with some polish sour cream (double the fat content of the reg sour cream here & very nommy )

I like to keep a stash in the fridge too! Lifesaver yesterday with that power cut - anything else we had available would have needed cooking! And I MUST put Marmite on the shopping list…

Oldest daughter made a keto pizza with a canned chicken crust and did a white alfredo sauce with bacon and garlic. topped with kalamata olives and feta cheese. Pretty darn good.

Overcooked Haddock and Chicken Tenders tonight. Wife and Son were visiting with some neighbors and I actually fell asleep. So it overcooked some… But oh well. Had a few Pickled Sausages, 2 Squares Lindt’s Dark Chocolate and some Peanuts. But think I will Fast for a bit now.

Made a flank steak to have through Tuesday. The Brussels sprouts weren’t as good as they usually are. Mostly ended up eating the crispy burnt leaves off the baking sheet instead of the Brussels sprouts themselves.
