Brought in lunch today… Pickled Sausage, Cheddar Cheese, Pepperoni, Cottage Cheese, Strawberries and Black Berries, a Slab of the Hamburger/Cabbage from last night and some ground Sausage leftover from Sunday. Also had a bottle of Almond Milk and some Pecans.

My students and I had broccoli, leek, basil and cream cheese soup for lunch, followed by keto lemon mousse. Apparently they ‘couldn’t give up carbs’! We were full, it was delicious. Oh well.

Broke my 42hr fast with dill covered Salmon over Garlic & Dill sauerkraut. 42 hrs might be my magical fasting zone where I don’t get refeeding issues, so far so good :slightly_smiling_face:

This was awesome! Two turkey salad chafflewiches with a pack of chorizo crisps…just like a sandwich and crisps for lunch! I had a rare few chunks of watermelon too :blush:

I am consistently amazed at how extraordinarily breadlike a blended chafflemix can be! When I gave up bread I didn’t think I missed it and I didn’t feel I needed a replacement - but when Mr S started keto and wanted sandwiches I was reminded of the convenience of making sandwiches to take to work, and it was a surprising relief!

Exactly! It holds up just like bread would!
I’m thoroughly enjoying all the different variations I can put between two chaffles, just like with a regular sandwich…I’m hoping to try coronation chicken next…that was my absolute favourite sandwich filling!!!

Had to look up coronation chicken. We would call that chicken salad in the states. I think it’d hold fine, I’ve put a lot of mayo and stuff in them and it worked.

Oooh, that’s Mr S’s favourite! Not yet served it between chaffles though! My fave is egg mayo, which I’m going to have tomorrow for the first time as a chafflewich - I’d avoided it initially for fear of it being overeggy, but as my chaffles are anything BUT eggy, I’m going to give it a go.

Doing devilled eggs later to serve with leftover meatloaf (deconstructed Scotch eggs, anyone?!) so it’s a no-brainer to do some eggs for chafflewich filling at the same time!

Had some lunch today… Tea, Almond Milk, Ham, Hard Salami, Turkey, Cottage Cheese, Greek Yogurt with Black Berries, Pepperoni, Pickled Sausage, Smoked Vienna’s, Cheddar Cheese and Shrimp. Also 2 Squares of 92% Ghirardelli Intense Dark Chocolate and Pecans.
