Thursday OMAD:

I find with radishes they need to cook 3x longer than potatoes to get them mild and not bitter. (and I like bitter flavors usually but not with radishes for some reason) I usually roast them or pan fry (thinly sliced) or have them in soup/stews/slow cooker. (For a mash I would use cauliflower…)
I love daikon in fish chowder so much and I am so excited that soup/sweater season has returned.
Is that what I’ve been doing wrong. I need to cook them longer. This was a half-and-half cauli and Diakon radish mash because I had a half a head of cauliflower left
I haven’t had a bitterness problem with daikon mash. Both cauliflower and daikon need a bunch of flavor to get past their flavor plain. Cauliflower tastes like mustard and daikon like radish but it mellows quite a bit when you cook it in water. I too found daikon needs to cook quite a while. That’s why I recommend using a pressure cooker if you have one. Also draining and puréeing well with garlic powder and rich dairy like HWC or Sour Cream. I always add cheese too. If it’s too loose I whip in a little Xanthan gum.
Today didn’t go to plan! I was meant to be working but Mum had no power (she has all electric) since 5pm yesterday. A very kind neighbour helped her with torches etc and up to bed, as she has a stair lift. She was fine last night but I have come to her today! Finally got a generator for her at 4pm! Need to have the road dug up to fix it properly🤨
Glad everything’s okay now! What about the back-up batteries for the stairlift, though? That makes powercuts a worry! My MIL had one and I think it still worked in a power cut.

Been a long morning. Up since before 2am… Just getting home and the Wife made me a quick lunch. Fried Venison and some Eggs. Also an Almond Milk and 2 Squares of Dark Chocolate and Pecans.
An extremely messy egg mayo chafflewich for dinner with some crispy kale on the side (I just fancied it!)

Good neighbours are certainly a blessing, this was good. She is fortunate to have an amazing daughter close by to help her as well! I am so happy for the both of you having such a close relationship, that is so wonderful.
I just asked her and she said the stair lift bought her down (bless she was just about to take a shower!), but it wouldn’t take her back up!

Terrible lunch and tossed it before I finished it. Burger King has really gone downhill on the quality of their ingredients.
In a city such as Houston or Fort Worth when I ask for no bun on a burger they never hesitate and know exactly what I want. I ordered this in the Little Rock airport. “Double cheeseburger, sandwich only, mustard, pickles and no bun.
Confused look. I repeated my order a bit slower. “Do you want the bun on the side?” No, I don’t want the bun at all so no sense in wasting food. More long stares. The woman at the prep table asked her what the order was and she hesitated so I repeated it a bit louder for her. She nodded and went to get a plastic clamshell tray.
Scratch this one off the list - burger was terrible. I didn’t know the double cheeseburger had four slices of cheese. If it had been real cheese it would have been good. Or just one slice then probably ok. But four slices of fake cheese gave it a plastic taste.
Bit of dinner after a few hours of needed sleep… Pickles, Olives, Cheese, Pepperoni… Cauliflower and Broccoli in butter… Crock-Pot Roast with Onions, Celery and Radishes… Greek Yogurt with Strawberries and Black Berries, Dark Chocolate and Pecans.
Paò Caí (Homemade Chinese Sauerkraut) with Ground Pork in a cool Chinese Fish dish I scored today at the Goodwill store.
