I’ve been so busy over the past week that I’ve hardly participated in the forums- nor have I gotten any writing done at all. Haven’t forgotten to eat though!
I created a sweet cinnamon chaffle yesterday that is so pillowy and warm- like a fall time hug. Once I get the recipe typed up I’ll post it in the Chaffles thread. It’s kind of a riff on Carl’s recipe, in that I really enjoy the texture of a chaffle that has baking powder and konjac- but that’s where the similarities end.
My husband made dinner tonight because I fell asleep on the couch watching some Netflix show that must be boring because- well, I fell asleep about it. Anyway, he did not disappoint with this rib eye, steamed asparagus and zucchini halves covered in cheeses and spices. Prep and cook time for the entire meal was less than 20 minutes. He’s a good guy.
And finally, the big mortar and pestle I ordered arrived today. Now I can get to work developing a Keto Thai curry!
I skipped the cream in my coffee this morning - which means I was hungry by 9am bacon wrapped salmon, cherry tomatoes and scrambled egg
I had some bacon left over so I thought why not! Everything is better wrapped in bacon!

I enjoyed my chafflewich at lunchtime. After a busy shift, a totally random frankfurters asparagus and baked camembert!
Can you make chaffles with cheddar cheese? Or does it have to be mozzarella?
I think you can use any cheese but mozarella isnt so cheesy! Did you have a better day today?

Ended up eating something tonight, since the Wife said we had some leftovers that needed to be eaten, plus she made some more Fried Brussel Sprouts since I liked them last night. So did OMAD instead of Fasting. But told her it was no problem, it would actually work out better since I have things lined up for the next few days. … Grilled Lemon Pepper Chicken, Cauli-Egg Salad, Pickles, Olives, and Fried Italian Brussel Sprouts. Also ate some of the Pulled Pork that needed to be eaten.
Dinner was a repeat of a mealime creation I have made before. I wasn’t happy with the color on the chicken breast but it was cooked perfectly otherwise.
I bought some chicken livers and made some pate this morning. The flavor is good, I put in some primal kitchen avocado mayo, garlic, salt and pepper, and horseradish mayo.
The amount is about twice what is shown. The rest I froze in two separate containers because it can go off fairly quickly
