Hunted early this morning, but the winds weren’t in my favor. Saw 4, and had one about 25 yards, but it was at first light, so they moved up the hill and feed on top the ridge. Came home to grab a bite & then headed back in where the winds have shifted in my favor. … Wife made me a T-Bone Steak, Eggs, Bacon, Scrapple, Sausage Links and Sausage Patties. Eggs had to go on a plate of their own, since the platter was full.
Lunch on the go: chicken salad with celery, green onions, a little chopped pickle, toasted walnuts, avocado oil mayo, a heaping big spoonful of Dijon mustard, salt, lots of fresh cracked black pepper and… a little bit of diced apple. Very, VERY tasty!
Breakfast in the Sun
Another beautiful morning in Central California, Sausage and Scrambled Eggs with Thai Dragon Chilies , Tomatoes, Jalapeño Havarti and Sour Cream.
You have a keto version of scrapple? Recipe, please! What do you use in place of the corn meal?
Rib-eye, cream, wine, butter, mushrooms, a small tomato, cauliflower, runner beans.
Merlot x lots. Frankenfluff. Brie.

Black Bear Diner in Salt Lake City while waiting for a load. Pesto salmon over spinach, steamed squash, green beans-bacon, salad with blue cheese & Italian, added my own olives & celery.
Breakfast of eggs and bacon with a couple Keto coffees, then the casserole for lunch and dinner, topped with sour cream and jalapeños, then starting a fast.
May not stop by this thread as often if I’m smart but probably will anyway. I love keeping up with what y’all are eating!
NOTE: I should have used “cheese” instead of “cheesy” in my photo. Reads weird and is actually incorrect. Sorry, I’m a nerd. I can’t let that go without mentioning it. I would’ve been thinking about it all night.
Breakfast at a local hotel: steak and eggs! You can’t actually see the steak in this photo, but trust me, there’s 6-8 oz of American Wagyu beef hiding underneath. Delicious.
Lunch at home: scallops (cooked sous vide and then seared in a frying pan) garnished with softened blackberries and diced bacon.
Saturday was a TMAD. I was up ALL night ( ZERO Sleep) doing server upgrades so I was HUNGRY. lol
Lunch: 15oz Ribeye
Dinner: 1/2 Rotisserie chicken (sides went to wife and daughter). Also not pictured was some dry rub pork ribs my wife couldn’t finish. Fair trade for the cheese and corn grits (even though they are delicious)
No, but I wish I did though. It’s just the store bought basic Beef Scrapple, and since it is carby, I only do a couple slices when we do make it. (think it’s about 4 carbs for 2 or 3 slices?) But also don’t eat it very often either. Have had it maybe 2 or 3 times over the past 5-6 months or so?

Almond meal makes a great sub for corn meal. Look at these two videos for good cornbread/dressing recipes.
And add in the possibility of using baby corn and/or sweet corn extract to make it taste “cornier” & I think you could come up with a very satisfying scrapple. I used his cornbread dressing recipe at Thanksgiving last year. It was Ah-MAY-zing!
What sauce is on the chicken? Roast chook is getting boring to me.
