Made some cauliflower, broccoli and stilton soup to take to work this week. Mmmm one of my best! I’m loving using my instant pot for soup, I don’t know why I never thought of it before
Chicken tenderloin with “Mexican spices” and extra chili cooked in bacon fat, with leeks, cream and tomato sauce. And Edam cheese on top. (I think it is Edam… the Chinese label says “red skin cheese”. Well, thanks for informing me of the color of the wax on the outside, what would I do without you, label.)
My recent cooking technique is to cut the meat while it is mostly frozen, putting it in the pan with a small amount of water, maybe a third or half cup? and adding the spices and fat. Then stir occasionally until the water is gone. Then I add the veg, cook a bit, then add the cream and in this case tomato sauce. Chicken à la fainéant. (Lazy chicken)
This tomato sauce I found today! Ingredients: pomodori, sale. That’s it! And it was cheap! 4 something carbs per 100ml. Which is fine when I just put one glug into the pan.
The recipe for the meal had proportions for the spiced nuts. You soaked the nuts a bit before hand, although if you were doing spiced nuts for snacking you might toss them a little egg white. This was 1/3 of a cup of nuts with a quarter teaspoon of cayenne and a half a teaspoon of cinnamon , And a teaspoon of sweetener, plus a little salt. If I were doing them for snacking I might bake them in the oven for a bit
An extremely random dinner tonight - I came home from work early for a rest before my daughter came home. All I fancied was left over chicken from last night with mayo, I cooked some burgers and over cooked them!
I understand drinking on the job, I would even turn a blind eye to a whiskey-soaked kid pick up, but please, take care of the meat, this is a keto forum after all, cows are sacred here…

Just been out for an early supper with some girls from work, it was a leaving do! I had lamb burgers with hot chilli sauce, salad and coleslaw. It was ok!

I have come home for an early night as I am on a day shift tomorrow. They are going off to get messed up on cocktails!

OMG, dinner was So off the chain ! Brisket Sous Vide’d at 133 for 20 hours… oh, and some beef sirloin tips at 133 for 4 hrs (SV’d at same time) … different bag. In fact, the brisket was marinaded in Low Sodium Soy Sauce, and seasoned with granulated garlic and black pepper, while the beef tips were marinated in Worcestershire sauce.
And the Zucchini Auto Gratin was freaking amazing ! Recipe ? Um… cheese… butter, more cheese. … salt pepper… more cheese Seriously, at this point, I don’t even think my GF uses a recipe. She just starts mixing cheeses… cream cheese, parmesan, pepper jack, butter, etc.
