I’m not sure what went wrong tonight guys :joy: I had myself all set up to make cheesy scrambled eggs and bacon tonight…I spent too long cuddling with my daughter and came back to scorched bacon :joy: completely ruined…back up plan was to have a cold plate of mixed bits (cured turkey aka cat food, some olives, the cheese I grated and some boiled eggs) Any way, I didn’t boil the eggs for long enough and they plopped out of the shell so I settled for the turkey and cheese for dinner…no photo…it wasn’t pretty! :joy::joy::joy:

Broke this weeks’ Fast… Side dish of Cheddar Cheese, Pepperoni, Olives, Pickles, Pecans and Ghirardelli Dark Chocolate. Main dish; few strips of Steak and some of the Rotisserie Chicken. Both were made for dinner last night, but I didn’t partake in… well, not until today that is. :smile:

A long tiring day warranted a big supper! Sausages, cheeeeeeeesy cauliflower, roasted crookneck squash, French beans and coleslaw, followed by a MASSIVE portion of Frankenfluff.

Ha! I was having trouble uploading my dinner picture and was low on free memory on my iPhone. I deleted some apps and photos to free up space and deleted my Dinner. Giant cheeseburger I did as a trial run on a inexpensive grill I picked up, $11 at a local thrift store. I finally used up the opened packs of ground meat I had stocked up in my fridge and looking forward to some different meats next week after my
Bulletproof Weekend. :cowboy_hat_face:

Fried Cod… We used almond flour, ground flax seed, and vital wheat gluten. Dipped fish in egg, and rolled in mix, fried in avacado oil. Served with Jalepeno’s tarter sauce :slightly_smiling_face:

Side dish of Zucchini pesto noodles… Which were super tasty…

And now my GF is mixing up some sweetened whipping cream, to top a Blueberry keto cobbler for desert :wink:

Geez ! What a struggle ! I just don’t know how much more of this Keto thing I can stand !

It is quite naughty - packed with artificial sweetener and colouring, plus of course some dairy carbs - but it did the job of rescuing newly-keto Mr S from an Angel Delight craving - it was fun inventing this substitute last weekend.

It’s a sachet of sugar-free jelly (strawberry) made up with half the normal amount of boiling water, with 2 individual pots of ff natural yoghurt and a 250g tub of ff cream cheese. I added the yoghurt while the jelly was still hot, whizzed it up, added the cream cheese and kept whizzing until it was pale, frothy and had expanded to pretty much fill the mixing bowl.

Made it at breakfast time, poured it into containers and bunged it in the fridge for the day. Makes 6-8 sensible portions. Although last night we treated ourselves to half the batch between us… shhh!

Nice staying at mums! Lovely cup of tea in bed! Set me up for a hard day. Have to drive home. Go for my eyelash extensions and Caci facial. That involves 90 minutes lying on a couch chatting.
Then a few chores before an evening out with friends at the new Tex Mex!

I ran out of pre-grated mozzarella. Knowing that it also has some cellulose in there to keep the pieces separate and some people worry about added ingredients, I took string cheese and stripped out lots of pieces and tore them in half too. The mix with egg did not look the same and I was afraid it wouldn’t work, but in the waffle iron it works just as well. Easy Chaffle.

Here it is! I’m so over the mini, wimpy weedy one. I got this bad guy!

Omg!

That is the most fun I have ever had out of 1 egg, 1tbsp cream, 1tbsp mozzarella and 1/2 lb butter! :yum:

Incidentally, I have just dropped a gift round to a friend for her Birthday and her husband said “oi Jax, you like a bit of rough (whisky) don’t you? Take this, it’s revolting”! :no_mouth:
