Well, we dipped our toes in the water tonight… Dungeness Crab, Shrimp, Haddock with some Garlic Cheddar Biscuits. (the 3rd one was still baking at the time of the photo) Also had a little Halo Ice Cream when it was all done, along with 2 Squares of Lindt’s Dark Chocolate and a Coconut Bai.

We have been looking for nice thick pieces of Haddock for years, and the Wife happened to come across these at a place we don’t frequent much. But they were extremely good and I’m sure we will be picking up some more. Image doesn’t show just how thick they really are, but they were tasty.

I made this for my co-workers, it was my one-year anniversary on Wednesday…the one I prepared on Tuesday failed miserably, my heart wasn’t in it. This one looks and tastes much better :slight_smile: keto-friendly, of course :slight_smile: My co-workers are actually paying attention-one cut out all sugars and flours, the other is trying IF…i’m proud of the boys :slight_smile:

The recipe for the cake… it is a 6-inch cake pan, I used a silicone one for the cake layer and the metal one to assemble the entire cake.

  1. cake: https://jenniferbanz.com/keto-mug-cake?fbclid=IwAR0Kn-9Cie8qz2PwJowVSm0bcVsG-6NlWNeCGihYV4TrUAWLEjtANbbgGto I combined all the ingredients in a bowl, transfered to the silicone mold and microwaved for 90 seconds. Once it cooled down, I transfered the cake layer into the metal pan.
  2. Mascarpone: I mixed 250g of mascarpone with 1 tbsp of Surkin and 2 tsp of vanilla (these can be adjusted to taste) and spread it over the cake layer.
  3. Strawberries: I heated 250g of frozen strawberries, pureed strawberries+liquid and added two sheets of gelatin (dr.oetker instructions - i soaked two sheets in cold water for 10 min, drain, melt and add to strawberries). I poured the pureed strabwerries over mascarpone and transfered to the fridge for about an hour.
  4. choc ganache: I chopped 50g of 85% choc and placed it in a bowl, heated 125ml of cream, just until it starts to bubble on the sides, and poured the cream over the chocolate. Let it rest for 5 minutes and then whisk until well combined. Transfer to the fridge for 15 min, which vigorously for 20 seconds, 15 minutes in the fridge, take out and mix with a hand-held mixer until nice and fluffy. Cover the strawberries layer and put back in the fridge overnight.

This was my husband’s favorite SAD cake, so I ketofied it.
This cake is the SAD version, it had chocolate mousse on top, but unfortunately the chemistry of these 85% and over chocs is different and the mousse didn’t turn out well, it wasn’t light and fluffy, so I made choc ganache instead. One day,I will have to calculate how many carbs my original mousse recipe actually has, if I use the Manner dark choc…the mousse is just wonderful :slight_smile:

Carbs vary with the size of your slice… :joy::joy: You can also add whipped cream to mascarpone, but I didn’t want to push it, too much of a good thing :wink:

Friday: (no pic) 4 x Chaffle … 2 w/ butter and 2 w/ cheese and potted meat.

Saturday OMAD: 4 x Whopper patties, cheese and a slice of hogshead cheese.

Sunday OMAD: HUGE ribeye cooked from FROZEN in the Air fryer

and this is how it came out on the inside:

It was excellent (cooked from frozen) because the center was still good and rare, but the outside and fat was nice and crispy. I cooked it at 400 degrees for 11 minutes per side.

I have found a brand of psyllium husk powder that does not turn purple. I didn’t like the purple mostly because it drew attention to my lunch at work… It is found on Amazon and I think it is great.
