That must be fun doing that together as a couple, very cool =). You do well with staying Keto all that time on the road too, which is great =).

Safe journeys to you (always) but especially in Florida with the tumultuous weather there this week.

Is your truck set up for living in it on the road as well; since you only are home the 30-45 days?

Had a bite to eat, before setting up and packaging up all the Meats from yesterday’s Meat run… Eggs, Bacon, Sausage Links, Scrapple and a half Rib-Eye Steak.

Rolled Omelette and Sausage

Omelette with 5 yo Gouda, Breakfast Sausage and Tomatoes. I bought this cheese months ago and it is so hard and dry mold doesn’t seem to grow on it! Completely natural cheese too, just milk, salt, cultures and a really long time aging. I will definitely buy more when it pops up again. It’s really potent too, 15g. has a lot of flavour. That’s why it’s lasted so long.

Took a while, but finally got it all vacuum sealed and put away…

Picked up a whole NY Strip Streak, cut in 1" … Plus some trimmed ends for the Pups

Sealed up in pairs of two’s and three’s. Wife and Son eat these most or more, though I still do as well…

But I do like Top Sirloin a little more, which are usually much more fatty, and extremely large. These wouldn’t even fit on a normal sized dinner plate, so I cut some of them down some…

Cut some up, but left some whole as well. Plus, some more treat pieces for the Pups. :slight_smile:

Also picked up 5 lbs. of Bacon, a Roast to try in the Sous Vide and a London Broil the Wife and Son wanted to try making some Jerky with…

You would have loved it @CrackerJax! It was a festival in the woods, really lovely. It was 'll decorated so nicely, it was a family friendly event with nice wine and live music!!

Lasagna bake and some sautéed spinach, probably served myself a bit too much :joy: but at least I won’t be hungry for quite a while!

Certainly not the Taj Mahal, but yes, we have a double sleeper and a small refrigerator. I had leftovers I needed to eat today, so I made myself a bacon cheeseburger salad with avocado, while hubby went down to a diner about a block away (he’s not big on leftovers). We have a microwave but don’t use it much. We shower at truck stops (which sounds yucky but can actually be quite nice with roomy stalls & massage heads). If I could figure out where to fit a small freezer, we would “eat in” a lot more. Our biggest challenge is “Pit Stops!”:blush:

Wow that’s crazy! So your truck is your home :slight_smile: it’s cool you guys get to travel and see everything, probably not a lot of downtime to actually enjoy the states and explore though?

No Ma’am, at least I haven’t yet. But V has asked me numerous times about doing so, just haven’t yet. And oddly, where I’m at, this is readily available on every other corner. I just usually go to a place called Nicks, who sells in bulk. So this week NY Steaks were on sale for $5.69 a lb., and the pieces usually average about 15 lbs. whole. But they will cut it anyway you like. I just usually get them 1" cuts and not trimmed at all. (Also picked up a whole Top Sirloin too, but they weren’t on sale this week.) … I haven’t hunted in three years due to not haven’t a place really, but when I do, I usually keep the deep freezer full of Venison. But yes, I do all my own butchering, have done so for over 20 years. Wouldn’t know what it feels like to have a deer butchered up for me? :slight_smile:

Tonight’s meal…

Wife made Shrimp Scampi, Steamed Shrimp, Salmon and some BBQ ribs. Also had a small amount of Pecans, 2 Squares of Lindt’s Dark Chocolate and an Almond Milk.

@CandyLindTX The Gouda is Artikaas Reserve 60 Month Aged Gouda. It’s deep orange with a black wax rind. There’s little white crystals in it. Those are tyrosine, an amino acid byproduct of lactic acid fermentation and a sign or high quality aged cheese like Parmesan Reggiano.

I swear I bought this like three months ago, about 7oz I think. I don’t eat it often as it’s special and cost more than I usually pay for cheese. It’s really hard and it crumbles a little when you try to slice it. I use a fine grater and it’s fluffy and light kind of like dry snow. A cup full would weigh just an ounce or so. I will get some next time I see it, I’m down to a 1.5” cube. I usually have five or six open cheeses going at once! Maybe I have an issue…:face_with_monocle::cheese::cheese::cheese::cheese::cheese::cheese::joy::joy::grin:

I thought you were driving a cold rig, can’t you put anything in back. Probably locked I guess or full to the brim. :cowboy_hat_face:

Keoki’s pork laulau, a fried egg, homemade Daikon kimchi and some Hawaiian chili pepper water for the kau kau win. I’ve said it before and I’ll say it again- traditional Hawaiian food is damn near nutritionally perfect.
