What Did You Keto Today? The Trilogy!
Awe. Well, you’ve been doing some extra circumstance mitigation that I haven’t @David_Stilley.
Anyway, yeah- it’s a new batch. I just did a small daikon only batch. Had a daikon in the fridge that wasn’t gonna keep unless I made it funky.
@Wahinewanders You can only do so much with ground meat, eggs and cheese everyday. I try to fancy up the burgers, made Meatzza, meatballs, meatloaf, meat and eggs, eggs and meat, meat eggs and cheese, cheese eggs meat eggs and cheese and meat and lots of sliced tomatoes. So I am getting plenty of variety…
Still enjoy the meals though.
Well regardless of your limited ingredients list of late, the foodie chef in you shines right through @David_Stilley. Your plates are always so good looking.
Oh okay, that is nice you have a good butcher’s near you. When we had all our kids at home we always bought half a cow once a year or so (sometimes over the year) from friends that are Beef farmers. I noticed you eat a lot of steaks and red meat so just wondered if you did that as well =).
And there’s your dog licking it’s chops and drooling again!
I can’t eat or use the bathroom without him or he cries! He pouts when I go to work! He’s a big baby!

I knew I didn’t need a bread substitute.
I knew I didn’t want to source ingredients I’d never heard of.
I knew I didn’t want to be bothered.
I knew I could choose to just not eat bread, and to simply eat my sandwich fillings with a spoon.
But then Mr S wanted to jump onto the keto train, and asked me if I could make him some rolls for his packed lunches. So I had a go with ‘the best keto bread’ recipe on the Diet Doctor website.
I was very, very dubious at first.
So was Mr S. He was okay with his lunch on day 1.
Enjoyed it on day 2.
I tried one on day 3. I was impressed!
And now, having just gone from this…
…to this…
…and beyond that to a small pile of keto crumbs in a nanosecond of gobbling lunchbreak greed, I would like to apologise to the incredible world of keto substitute homebaked goods for my initial aspersions! My verdict: keto rolls ROCK!

Friday (no pic, but not interesting), we were heading to the High School football game (where my wife teaches) so I had 6 Whopper patties while on the road (I was passenger … she ate Popeye’s chicken strips while getting mine)
Saturday - OMAD at Texas de Brazil.
Sunday Lunch was Longhorn burgers.
Sunday Dinner was 4 Whopper patties and Chaffles (I got the $10 Dash waffle maker). I made a “double whopper” and just ate the other 2. lol
Monday was OMAD and back to normal (no pic) 1 lb ground beef w/ Parmesan cheese and chicken livers.
Egg and cheese chaffle. I just got a Dash mini waffle iron yesterday and I’m looking forward to playing more with my new toy.
Haha I have a Dash waffle maker in the post. They sure look good!
But today I had
Spicy ragu with creme fraiche and cheese! Looks a bit Jackson Pollock around the edges but it was delicious!
Super tender sous vide tip roast (135 degrees for 24 hours). I sliced and rested the meat in a beefy mushroom gravy but keeping it medium rare. I baked salt & pepper rib eye steak tips till crispy golden brown and served it with some green stuff.
I mean … the way I cooked it, it was carnivore. (1 egg, 40g of shredded cheese).
I don’t know … I have just seen so much about them lately, and for $10, it was worth a try. I did like it so we’ll see if I incorporate them.
I love chaffles. I’ve tried a few different recipes, but keep coming back to the basic recipe. I do my beaten eggs in a shaker cup, so I can keep them in the fridge, ready to go. I may do batters in it later, but so far, all I need is the beaten eggs.
Early on, I had some problems with overfilling the waffle maker, so now I put it on my kitchen scale and measure out my layers:
- 10 grams of shredded Italian blend cheese
- 25 grams of beaten egg
- 10 grams of shredded Italian blend cheese
To me, that’s the perfect chaffle. Firm and crispy, because the cheese is on the top and the bottom. From there, it’s easy to go sweet or savory. For savory, I just slather on a little Jalapeno cream cheese. For sweet, topped with either SF maple syrup, or I dump some Lily’s chocolate chips on them just after they come out. The heat melts the chips nicely, giving it a chocolate sauce on top.
I have tried cooking the chaffle with the chips inside the chaffle, but they’re much better as a topping.
One thing I love about chaffles is how filling they are.
