Wife picked me up a Rib-Eye Steak yesterday and decided to make it for my Mid-day meal. Along with some fried Eggs and Bacon. … Actually talked her into taking some, so she took the smaller piece and one of the Eggs before She and my Son left to run to the store. So I ate some Gizzards and Hearts too.(Actually have had 4 packs simmering in the slow cooker all day yesterday and last night. (Most went to the pups, beside the small bowl I ate.) They were extremely tender and tasty to say the least, so didn’t even add anything to them. … Steak was quick grilled, leaving the center quite rare.

All-in-one bottom-of-the-fridge-and-freezer fish curry. Mostly to use up the glut of courgettes and crook-necked squashes, and I chucked a small handful of frozen peas in out of consideration for Mr S.

Oh, those keto rolls I made for Mr S the other day - the ones I wasn’t going to touch with a bargepole, let alone eat - I had one for lunch today, jam-packed with egg mayonnaise. I take it ALL back - it was an excellent bread-stitute, and I shall be making them again (with a little less salt).

I have a LOT of catching up to do! We’ve logged a lot of miles since I got back on the road. Today, we are at the Bread Basket, a favorite deli chain in the Detroit Metro. I’ve got a Rueben & Wayne’s eating turkey. No bread, of course. I ordered extra kraut because I ran out in about 4 big bites.

Blackened Burger and Fruit!

I’m heading over to my old friend and bosses house to watch Shawn Baker YouTube videos trashing the vegans and their agendas! Should be a fun afternoon. It’s very hot here today, I harvested all my tomatoes, about a 16 quart mixing bowl full! Now I have to make tomato sauce and can it I guess. Tomorrow anyway…:hot_face:

Dinner (and breakfast and lunch…): taking inspiration from several regular posters… a burger bowl. Ground beef (80/20), mushrooms, a tiny amount of caramelized onions, onion & garlic powder, cream cheese, grated sharp cheddar and a bit of hot sauce to cut through the richness of all the added fats. Not too shabby. SUPER easy. Oh, and salt & fresh ground pepper.

I hope I don’t lose my keto card for ordering chicken at a Texas Roadhouse steak restaurant … but that is what I wanted.

Chili (no beans, some carbs in sauce, Caesar salad no croutons, and chicken smothered in mushrooms, onions and cheese. Will probably scrape some of the onions off as they can add up in carbs.

I wouldn’t … :wink: I don’t do them that often either, but when I do, I enjoy them.

Tonight’s meal… Country Steak with Gravy (again) :slight_smile: One of V’s favorites… 2 Uncured Knockwurst, Deviled Eggs, Pickles and Olives. Also had 2 squares Lindt’s Dark Chocolate.

Oxtails are a labor of love around here.

The Browning

My mirepoix replaces carrots with a roasting pepper. They got the sauté treatment in bacon fat, just after the oxtails browned

**I deglazed the Dutch oven with red wine, then added the liquid and blanched these tomatoes (picked from my garden this morning) for easy skin removal. Then I chopped them up and added them to the braising liquid **

Ready for the six hour low and slow!

Chanterelles are a splurge

Oxtails smothered in a Chanterelle sauce with red globe radishes on the side. A meal worthy of the time and effort it takes to produce.

Yeah, I didn’t even think about the fact that we were right in your neck of the woods! We delivered in St John’s yesterday, then got up this morning & went to a truck stop in Grand Ledge to shower, then drove to Livonia to wait another day for our load to Florida. UGH. We would have had time to visit! Rats. :confused:
