What Did You Keto Today? The Trilogy!

('Jackie P') #4546

For lunch I had a small avocado wrapped in bacon and baked, with pepperonata and sauerkraut.
I’m going out to dinner with some friends tonight! :yum:

(Diane) #4547

Is this for one or two chaffles?

(Steve) #4548

That measurement is for one chaffle

(Jane) #4549

Crab stuffed shrimp with drawn butter at dinner last night

#4550

@Janie Janie - were the shrimp made at home or were you out somewhere? They look delicious!

Basically its layers of Cabbage, Ricotta Cheese, Mozzarella Cheese, Parmesan Cheese, and the Meat sauce is made with Rao’s Marinara Sauce. (She thought of adding a layer of Mushrooms but didn’t) The Cabbage replaces the normal noodles quite well. … And yep, I’ve thought of trying a Sausage variation as well. Similar to maybe a Meat Lovers Calzone, or even a Pizza version with Pepperoni & Sausage.

I think you can pretty much throw anything you like into layers and the Cabbage just adds to it.

Also just finished eating a early mid-day meal… Had another piece of the Cabbage Lasagna from last night, and then Eggs, Bacon, Sausage (Link & Patty) … London Broil is in the Sous Vide for later.

(Diane) #4553

Do you blanch or cook the cabbage leaves before using them as “noodles”?

(Kristen Ann) #4554

I like to boil mine for 3 minutes before I use them in the lasagna.

I tried out Keto Christina’s (YouTube) recipe for Keto Fauxcaccia bread, pretty good especially with the spread, feta stuffed olives, & black pepper on top. It’s like a very sturdy take on fathead dough (combines coconut & almond flour and doesn’t have cream cheese, uses psyllium husk powder).

Slow-cooked - 4 hours - aubergine parmigiana, topped with even more grated cheese and finished in the oven.

Delish pish!

Friends over for lunch, not keto but willing to try and are interested as they can see how much I have lost and look and feel better. Didn’t want to deprive them of a pudding but also wanted to show that things can be ketoed…the result is below…they ate and said they enjoyed and are gonna look into this woe now…win win! Lovely to have such open minded friends :grinning:

(Ashley) #4559

Bacon and mayo chaffle!

(Full Metal KETO AF) #4560

@monsterjuice I think your dog licking his lips means give me one too! :joy::joy::grin::cowboy_hat_face:

(Ashley) #4561

He got some of it David don’t worry

#4562

Yes, cook them up some, pat them dry and we also remove the thick vein from their centers. You could use them in there actually, but it helps them to lay flatter and you don’t have that thicker piece in there.

(Tyler) #4563

Bacon wrapped pork tenderloin. Nothing but meat today

(Jane) #4564

Eating out. Papasito’s in Ft Worth. A Texas chain I believe started in Houston.

They were a bit pricey but so yummy.

(Jane) #4565

Deviled eggs on pickle slices.
