What a ruddy mess, and probably too fine now. But anyway. Does this look right?

I use a jar like yours but keep it sealed (although I do burp it every morning).

My top tip is to use the same liquor every time - my first batch took ages because the ferment was starting from absolute scratch, but now every time I strain a batch to store in the fridge I always use the liquor for the next lot.

I shred with a knife so I don’t have to deal with washing up the food processor!

Ginger is a great addition, as are a few strips of carrot (very thin, with a potato peeler). Juniper berries are incredible and make it taste a bit like gin! I don’t like caraway seeds so haven’t tried those.

Do report in with how it’s progressing!

This was a “quick” meal for the kids. I also didn’t want to take the time (or think about) making a crust. Also, I was using up food in the fridge.

A thing of beauty, it looks good. Put it somewhere out of sunlight in that clear glass. I never vent because letting oxygen in can cause problems. That style jar is made for canning and will vent as pressure builds up on it’s own. I have done many batches without venting and you get zero Kahm yeast or mold growth in a closed anaerobic system. I read both ideas on venting and chose not to do it, I even ferment in standard mason jars finger tight without venting. Just as you would do them for heat processing. As long as I leave head room for expansion it’s never made a problem for me.

Chris, fresh homemade sauerkraut that’s living food is much different from canned sauerkraut mush you get on a hot dog. It’s flavorful with whatever you add to it and it has a nice crunch to it. Yea… My Mom made home made saurkraut from cabbage she grew in the garden… And some of her friends raved about it… Tasted like rotten cabbage to me :grinning: lol
But whatever you like, if it’s Keto, it’s all good :slightly_smiling_face:

Decided to experiment some this morning. While the Wife was cooking some Sausage and Eggs, I took some Tuna Fish, added some Old Bay, Mozzarella Cheese and Egg and made up some patties to fry. So I ended up having some Salmon and Tuna-Fish Patties for a meal…

Salmon slabs with Melted Butter…

Last one I actually added some Yellow Mustard to the mix before cooking. Wasn’t bad…
