The omelette kinda plopped out of the pan onto the plate it was super cheesy though…double Gloucester cheese has a nice melty texture and taste!

I ordered lots of Fox Hill kitchens bunz. I ordered a large batch so that the shipping was free. The shipping to get things out to Colorado from their facility is actually quite high. I froze five packages immediately, and put one pkg in the refrigerator, keeping out one bun.
I opened one up and spread it with a bit of butter and a whisper of peanut butter. I found them to be slightly better than the ones I make with oat flour. They are moist, damp. Cold to the touch. Biting into them is interesting. They are slightly rubbery. The crust kind of pops when you bite through it. The crust is OK, not bread really, but OK. I am looking forward to using them up and making sandwiches. In the end only wheat bread, is wheat bread.
I’ve never found of bread alternative that doesn’t make me shudder and dry-heave.
Feel like I’m watching a science experiment when I watch some of the concoctions people make on YouTube.
I’ll stick to the breadless sandwiches and lettuce-wrapped burgers for now.

Not today but rather last night. Husband and I were able to get a date dinner downtown on a random weekday because both kids had places to be for a few hours.
It wasn’t a super keto-friendly place in general so I got the charcuterie board (with leftovers for today).
Accidental no-breakfast fast for me today - had a diabetes hiccup which gave me zero appetite for my scrambled eggs this morning.
Just made up for it with scrambled eggs for lunch instead - packed with butter, cheese AND mayo - which shows how much better I’m feeling now!
actually, I only cut the end off … it is a fresh made one so it was smaller and shrank when air-fried

I’d forgotten how good cabbage is cooked this way! A tbsp water a tbsp butter and lots of salt and pepper.
