My friend came over for a visit and I made these for lunch, (was preparing before she came over and popped them into the oven when she arrived). They were delicious! She loved them, and my eldest daughter had some too, we all loved them.

Cut up red peppers, cream cheese on them, and wrapped in cut up pieces of Piller’s Black Forest Ham luncheon meat. Baked at 375 degrees for about 15 minutes (I kept checking them).

I adapted the recipe from @Janie

She does them with normal peppers or jalapeno’s and bacon.

Thanks @Janie, they are delicious, I will definitely be making them again!!

BOO about the tooth. My husband had a cracked tooth they were able to fix, but not before it was all infected, etc… It was awful.

Ah, camping. I’ve always pre-made our camping meals as much as possible and now that I’ve got a little more than a year of Ketogenic eating and several trips into the woods under my belt, Keto camping is getting to be old hat.


Chili dogs

Baggie boiled omelettes with sausage, zucchini, mushrooms, cheese and a pat of Kerrygold.

Asian crackslaw with ground pork

Hazelnut vanilla granola in Mac Nut milk.

It was a perfectly cooked piece of crackling on a pork knuckle☹. It was delicious but I only got 2 bites!

Dinner tonight was a yummy mixed plate of stuff. Once again I’ve finished the day having snacked inbetween meals and I regret nothing! :joy::bacon::chocolate_bar:

Greek Ribs
One of the easiest time saving meals that I cook.
Chop pork rib breast bone pieces (all the junky stuff from a whole rack of side ribs) up into bite size chunks, 2 cups water with aromatics. Pressure cook 16 minutes and drain.
I roll in my Greek seasoning, fry in oil till crispy (about 4 minutes)
Dip in lemon butter and drink what’s left

Yeah, it usually doesn’t, if it’s not real bad. But it’s strange, though I was having stomach issues, I felt great overall? Don’t understand it, unless it was just something I ate that caused it. But after eating the above meal, I’ve been working in the basement and outside all day with no issues? … Dunno? :smile:

Has some left over roasted turkey breast so I made some turkey salad. Got some bacon going in the oven as we speak.

I’ve actually been wanting Chicken and Turkey Salads lately as well. I might eat some when the wife makes it, but I would actually like to wait for her to make Salads out of them. … Also have been wanting to wrap it in a slice of Ham, for a sort-a Meat Burrito. :smile: … I already do this with Egg-Salad, and it’s quite nice indeed. … Also like the stack of Cheddar Cheese on the side. One of my favorites as well. :+1:

Family took me to Cracker Barrel the other night too. I ordered the Roast Beef with cabbage and broccoli (gave the other side to the kids). Apparently the Roast Beef is cooked IN a gravy. (I had asked for the gravy on the side to give to the kids as well.) The waitress kindly told me they could do a “low carb roast beef that is just grilled.” I didn’t even tell her I was ordering low carb. She just figured it out. Out came a rather beautiful, thick piece of roast beef with a nice crispy sear. I was pretty impressed.

I would assume she hears this often with the intended meaning “no condiments or vegetables on my burger!” Just meat, potatoes and bread. SAD style. :cowboy_hat_face:
