I’m at the point that I believe you can do nearly ANYTHING with pork rinds. Link for the Cinnamon Toast Crunch? Please?
What Did You Keto Today? The Trilogy!
I added the nut butter(actually I used tahini instead of peanut butter) on my own with the cream and butter.
Still waiting for a picture of the two of you! Where (what restaurant, locale) were you? It looked great. Were those collards?
That was five large eggs, I buy eggs in various sizes according to price. Right now I have mediums but I get jumbo often. Usually 3 jumbo, 4 large or 5-6 medium eggs depending on what I eat with them. Now I am in the middle of a dental process and can’t chew so I am eating more eggs than ever and loosing weight pretty much daily.
Unfortunately, my selfie skills need improvement as I somehow lost that picture of us.
yes, those were colllards and man were they good. Famous Dave’s in Woodbridge.
I would love to know where this place is. I’m making a bucket list of LCHF restaurants/coffee houses.
LOL… There’s not really a recipe, but I’ll tell you what I did.
I made way too much meat for some bolognese I was making. It was a combination of ground beef (probably 2/3) and italian sausage (around 1/3). I added some salt, italian seasoning, garlic powder (I’m horrible at measuring… Probably a tsp of salt and garlic powder, a TBSP of italian seasoning for 2lbs of meat). Actually, lemme see if I can recall this in recipe form, ha!
1.5lbs ground beef
1lb italian sausage
1tsp salt
1tsp garlic powder
1TBSP italian seasoning
1tsp herbes de provence (optional - it can be expensive prepackaged, but I buy it in bulk pretty cheaply)
5 cloves garlic, minced (I know these are carby, so you can do less, but dang I love garlic)
1 red bell pepper, diced
1 green bell pepper, diced
1 small onion, diced
1/2 small head of cabbage, sliced thin (or diced - however you want it)
1 quart beef broth
1 quart chicken broth (I had some in my freezer - all beef or all chicken would be fine)
1 small can diced tomatoes w/green chiles (usually, I make it more tomato-ey, but I wanted it more brothy this time)
Salt and Pepper to taste
Brown meat with dry seasonings. Save a couple tablespoons of drippings. Saute’ peppers and onions until caramelized, then add minced garlic. Add the broth, tomatoes, and meat. Bring to a boil. Add cabbage, and cook until cabbage is tender - about 10-20 minutes. Salt and Pepper to taste.
Made about 16 cups/8 2cup servings. I didn’t log it in MFP for nutrition, but I’m lazy ketoing right now. It was my one meal, and it was meat heavy… I snacked on pork cracklins and gouda beforehand, so I wasn’t super worried about total carbs.
I ate at Famous Dave’s in Arizona once. Good brisket! I guess they’re nation wide.
Cheese Burger and Scrambled Eggs
Burger with Muenster Cheese, Tomato slices, Scrambled Eggs with Avocado and Basil and a little more Cheese!
I found the fathead dough keeps fine in the freezer. I usually make about four batches at a time. I use one and freeze the other three.
Decided to eat something at lunch again today, but not sure about tonight? … Had (2) - Double Quarter Pounders, with a side Double Cheese Burger, Pepperoni and Cheese Cup and a Coconut Bai. I actually only ate one of the cans of Potted Meat with some Pork Rinds, since I got tied up helping my son out, trying to reach our Fleet Maintenance shop since he was down with a flat tire. (Didn’t have a spare)
I had a wonderful day in Rye with a friend! I forgot to take a picture of my lunch! A very nice mozzarella and tomato, salad but my tooth is still dodgy so took it easy! Hoping to get it sorted tomorrow.
We sat on the side terrace. A lovely hour spent, then a long walk and a natter. Pure joy! I didn’t even get a pang when she had a double cone ice cream!

Haha it’s a long chat about anything and everything! Often trivial, sometimes important, but jolly enjoyable!
