2 x 1/2 lb burger patties (cooked in the air fryer).
Still relatively new, I’m trying to find ways to cook my meats in batches so I’m not stuck making dinner at 7:00 p.m. Last week I made a brisket. Chuck roast was on sale, and ribs, so I have those for this week.
I like some heat so I made a horseradish cream “mayo” to go with the beef and asparagus.
Last night’s meal… Salmon, Chicken Gizzards and Hearts, Cheese, Kale, Pepperoni, Cherry Tomatoes, Pickles Sausage, Pickles and some Shrimp.
I didn’t write it down, but it would have been 6 sausages, roasted for 30 mins, then a batter made from something like 500g frozen cauliflower (microwaved, don’t drain off the water as you need it fairly sloppy), 2 eggs, lots of salt and pepper and a couple of tbsp nutritional yeast flakes - if I’d had some Marmite to hand I’d’ve used that - the yeast adds some savouriness and deletes some egginess. Or small amount of cheese is good for this job - not enough to taste cheesy, but enough to make it slightly less eggy.
Oh that reminds me - I made this a couple of times, and the second time I added a spoonful of Dijon mustard to the batter.
I whizzed up the batter ingredients with an immersion blender, poured it over the sausages and I think I cooked it for about an hour at quite a high temp.
Disclaimer: I never liked Yorkshire pud or toad in the hole crispy - I loved the stodgier bits. This recipe makes stodge, which is perfect for me, not so much for crispy batter aficionados…
It’s been a while since I made it but I reckon that’s kind of what I did. I’m going to make it again next week now I’ve started salivating.

Last time I spoke to her, she was waiting for the doc to sign her off and send her home with her meds!!
Bless her, I wish I had a chance to put some fresh sheets on the bed for her. Can’t wait to have her home!
