Winner winner chicken dinner! If only there was chicken broccoli and chicken cauliflower mash, this would be entirely chicken! Perfectly fried hand-formed chicken rissoles, a PURE chicken sausage, chicken gravy - as usual, it’s just the vegetables letting the side down. Not that they’re a let down, of course, but still, they’re not chicken. Kinda pathetic of them, really.

Juice, those Chicken Rissoles look damn good. Reminds me of Crab Cakes, or maybe Potato Cakes. I don’t know why, but it seems when you make little patties out of food like this, they are always so much better and I probably prefer them over the whole food product they’re made from. Might be because of the add-ins included in their making and then being recooked? Dunno? (Puts on thinking hat) 
 Got some ideas floating around in my head now for some new things to try

Late breakfast: egg muffins with feta, roasted red peppers and a few carmelized onions. Thanksgiving appetizer leftovers (cheeses, pepperoni, cherry tomatoes and some cheddar jalapeño cheese ball).

After a loooong time without ‘proper cooking’
(alternating between eggs and bacon and fasting for weeks on end)
I finally took time to really go all the way.
Roasted cauli mash with Mascarpone, a mushroom and pork goulash and greens.

I forgot how much I love good keto food

It was really good. Slowcookers are the best

Mascarpone is awesome because it makes things creamy without making it runny.
I actually pre cooked the whole head of cauli in the microwave, Roasted it super quickly in ghee just for flavor, and chucked it in the food processor. All in all not that much hands on time for the meal

Busy trying to do something of a fast. I have been having coffee with a bit of heavy whipping cream. Not completely a fast, Leaning more towards it fat fast. Additionally a good friend of mine, whose sister is keto, brought me some pumpkin cookies with almond flour, erythritol, and cream cheese. She wanted to know how I liked them. It was so sweet that she even brought them that I ate two. This evening in making supper for my husband, I ate some turkey skin. So 00000 I really haven’t been fasting totally. And the dinner that you showed there just made my tummy growl. Yum! I frequently use paper plates when it’s just me. Glad I’m not the only one.
