What did you Keto today? Part Deux!
@Elle79 roast lamb hearts are amazing. Other types I tend to fry in ghee with whatever seasoning I fancy.
Pork belly. Sous vide pork belly. Cooked to perfection in the water bath, then fried in bacon fat in a heritage cast iron pan before being topped with a ginger-garlic-soy sauce reduction. A side of Asian greens make a perfect dish even better.
Breakfast of championsssss! I’m not a big fan of eggs but my French style omelette is more like a crepe than eggs. Stuffed with ham and cheese, plus 5 slices of bacon and a dollop of sour cream.
Any particular flavors of that you tried and maybe not liked? My dad is keto now and I think this could be good for him. He doesn’t have much weight to lose and he does okay with a bit more carbs than me so he could handle these decently I think.
I cooked steaks for my husband and I. We also ate Caesar salad and a few pieces of cheese too. I didn’t take any photos, as we wanted to eat the steak immediately after cooking - at its optimal warmth and juiciness. Not bad for cooking it on the stove top in a skillet with ghee.
Called last minute from work, asked the wife if she wanted to go out tonight. - Texas Road House it was.
Had a Salad, along with a Porterhouse with Mushrooms and Onions, and of course a side of Mushrooms! Also added a single serving of Smoked Ribs to share. (Seen on the plate in the middle) Quite a nice meal. The wife had the same steak, but got a double Salad, & her side of Mushrooms were slid to my side of the table.
I actually started eating it, when I realized I didn’t snap a photo… So this is about 3 - 4 bites in. Plus we had some Salted Peanuts along the way.
So I have not been on for a while so I thought I would check in. Here is my last meal. I am in Nevada this was the best meal I have almost ever have had. It was amazing.

Snack dinner plate of Goat brie (so goat-ish it bleats when you chew it), Riga Sprats (smoked fish), roasted chicken, and 2 kinds of stuffed green olives (anchovy & chile). The sprats are fantastic.
This is the first of their dairy free versions I’ve had and it was really nice, same as their regular Salted Caramel, but the texture was different. In the regular Halo Top I’ve had Cinnamon Swirl which and Peanut butter - both seemed weird at first, but the taste grew on me as I was eating it. The chocolate and vanilla are OK just a bit boring.
There is still a small amount of sugar in them so I rarely have them, but my blood ketones were back to where I’d expect them to be this morning - blood glucose was a tiny bit higher, normally 4.8 first thing but was 5.1
I currently have this roasting in the oven and when it’s ready, it’ll be devoured in big chunks dipped in homemade mayo.
