Green curry & flat bread (coconut flour) again, still tweaking the bread but is nice to have something to mop up the sauce.

A sort of egg roll in a bowl dish using up leftovers in my fridge: sausage, coleslaw mix, mushrooms, onions, hot sauce, coconut aminos and a splash of vinegar. Needed some fresh ginger, but I’m out!

Yes with konjac powder! Don’t need much at all! Tastes just as good as regular flour. It’s a little pricey to buy but I got 8oz jar that will last forever with how little needed. I just add 1/2 teaspoon at a time.

Edit; think flat bread may be a trigger, completly satiated but something niggling saying just have 1 more…think will avoid for a while.

Got hungry early, so today will be a Big Lunch, Little Dinner Day.

Stirfry of Pork Belly & Veg. Added 1/8th cup of chopped smoked almonds…YUM! Topped with 2 eggs cooked in butter.

Chicken & asparagus salad with the last of the homemade baba ghanouj. Was bummed about the baba ghanouj situation but the meal turned out to be a bit pedestrian anyway so I won’t go into full mourning.
