They were actually quite nice. If I do them again, which is quite possible, I will cook them for longer to try and make them more crispy as they were still rather soft. It was this recipe I used -

We got about 3 inches of snow here yesterday. So the sweater. But she’s been sleeping in that patch of sunshine, very toasty! She’s a 15-year-old , arthritic, partially blind, partially deaf, epileptic pup with cardiac issues. But quite a dear and loves a bit of warmth.

Eggs scrambled with Mushrooms, Scallions, Hot & Sweet Pickled Peppers, Avocado, Kumato Brown Tomatoes and Jack Cheese. Espresso and HWC.

Just FYI, there was someone on the forums who tried his very best to cook the hell out of jicama to make it into fries I can’t remember who, it’s been awhile. He said that he COULD NOT cook them enough (he tried pre-boiling them, roasting them, etc) before frying, and they still had that stereotypical crispness that did not work for him in a fry. He could not cook it out. He couldn’t get them to have a similar “creamy” interior to potato fries.

That said, I’m sure there’s someone here who will swear by them.

Non starchy vegetables are difficult to get crispy. Maybe a shortcoming for all potato substitutes. That’s why I think daikon is best as a mash, it has too much water to crisp. It will brown but not get crispy. I have used it as home fries and corned beef hash but it never crisps. :cowboy_hat_face:

These were pre-boiled too, and I noticed the smaller ones were a lot more crispy so am hopefully a longer cooking time would be successful. It would also make the cooking time ridiculously long as these took over an hour as it was…
