What did you Keto today? Part Deux!
Trying to show my mom there are lots of different low carb high fat foods in this way of eating and you can get enough fiber. Made cinnamon flax seed muffins that have like 8-9 grams of fiber per muffin but they also have 24 grams of fat so fill you up with just a muffin. They’re a nice butter delivery device too, something my mom appreciates…Especially because I have no bread in the house
edit it’s 7 grams of fiber if you make 9 muffins, I found it makes 12 muffins just fine and they are a nice size
Oops The fiber is 7 gramsish a piece, mixed up some of the numbers. Also I made 12 and not 9 like she did the nutritional break down for because I assumed it made a dozen. I think that means I get to eat more than one muffin
Also, I put in extra cinnamon because I love cinnamon (about 1.5 tbsps) and I added a teaspoon of ginger and a shake of cayenne because I like adding some warmth to cinnamon flavored foods.
Spicy dry rub pork ribs with firey sauerkraut (homemade… actully 50/50 firey/reg mixed cause… um yeah, next time I may want to be a lil more reserved with all the chillies/ginger/garlic/tumric etc )
Omg I know a butcher who will debone a chicken, stuff it with a stuffing of your choice (sausagemeat these days). Take off the skin, lay bacon over the chicken and put the skin back on! Roasts up a treat! Take the bones for broth!

With the proliferation of low carb pizza options out there of course I had to do my own experimentation.
This is a hybrid of Matthead and Pork Rind Pizza. I had no idea the crust would be 4000 kcals without toppings or sauce until I plugged the recipe into Cronometer. Anyway it’s an interesting experiment for me to have like 5000 calories today and see if I wake up looking like Porky Pig tomorrow morning.

Made chicken legs and meat filled salad. Probably the best drumsticks I’ve made yet. Still eating keto while mom is here. Made deviled eggs with pimento cheese.
I put something in wrong, actually about 1100 kcals for the whole crust, only ate half cause I ain’t gonna be Porky Pig tomorrow and I got full anyway.
Nah, just didn’t want a whole lot today, since I ate half the Rotisserie Chicken earlier today and was breaking a Fast. … But I’m sure a full plate will be back tomorrow.

I have an awards night to go to for work so dinner is being made for me…I made very clear my dietary requirements but I have no idea what I’ll be having!! I really hope it’s something good!
That’s a nice little unit, Ernest. I don’t recall seeing one before? (Meaning a portable one that is.) I always thought I would enjoy cooking on one, but didn’t know they were available as such.
