Rump steak and crispy kale for din dins! I was supposed to have garlic bread with it but forgot to put it in the oven to heat up so I had it cold with a bit of butter…was nice actually! I went back for more steak…
Egg Loaf with blueberries, blackberries, and Lily’s chocolate chips. We use these for desserts, topped with sugar free syrup.
Chocolate Pumpkin Seed Bark
Recipe is similar to Chocolate Coconut Haystacks. The round mat underneath is 12 inches in diameter.
Egg Loaf

Ingredients:
• 8 eggs
• 8 ounces of cream cheese
• 4 ounces of butter (a stick)
• Various flavorings – I did 1 tsp vanilla, 1 tsp cinnamon, 20 drops EZ-sweets, …
• Berries or Lily’s chocolate chips (optional)
Directions:
• I cut the butter and cream cheese up into 1 ounce squares microwaved them for 40 seconds
• Added them to a blender cup with the eggs and flavorings
• Pulverized until I had a creamy mixture
• Evenly divided up the mixture over all of the molds
• Place berries or chocolate chips on top (most will sink to the bottom)
• I baked for 20 minutes at 350° F
Thank you! I have most this stuff besides the Lily’s chips, their quite expensive online and have never found them around anywhere! I might try this with banana flavoring as a banana slice type thing with some Lily’s if I can find any cheap nearby sometime!
Ok phew! As long as it’s still edible! I’d hate to waste a whole pack of butter!
I get mine from Vitacost.com. Their regular price is $5.66 for the 9-ounce bag. However, several times a year, they send me an email offer (“We miss you! Please come back!”) of $30 off a $100 order. So I load up my cart at that time and do a big order. After the 30% off, the bags of Lily’s chocolate chips end up being under $4 each. I ordered several when I did my last orders in February and November.
