The second picture down is sliced pork loin which would be cured and turned into peameal bacon. Peameal can be found in just about every Canadian grocery store. To make it keto, wash the cornmeal off the outside and fry in bacon grease. We had peameal on the flat top for lunch today. The first picture is Canadian back bacon and the only difference really is that it is cooked after curing.

OMAD is tuna, pickles, bacon (yeah so shoot me), and ā€œcheeseā€.

Then I turn it into this 8 year old child’s thought
process cheese, tuna and bacon mini taco.

Had a meal about noon of keto cheese biscuits, scrambled eggs with pimento cheese, and bacon (again!). My eyes were bigger than my stomach though and I couldn’t eat both biscuits. Almond flour is very filling. In the old days, I would have to stop myself or I’d eat 3-4 biscuits

It’s my one day off so it’s also meal prep day. Made burgers for the BFs work lunches and a bunch of chicken thighs. That plus the other half of last nights meal should get us through my late work nights until Thursday. I also made lime cheesecake truffles (not pictured)

Dinner was pot roast and also the very first beef meal since leaving vegetarianism that I not only liked, but lovedddd. It’s Mississippi pot roast and it’s so much better than the traditional pot roasts I had as a kid. I thought we’d have at least a whole meal worth of leftovers but we ate the you know what out of it and there’s barely one lunches worth. The mushrooms and salad were good too. I would have ate more but my body wouldn’t let me, lol

Being able to try new things agrees with me very much, and although I ate meat when I was a kid and teenager, it still is new to me and filled with culinary adventure. I might even go try one of those five guys burger bowls that have been popular of late!

Some pizza joints have Canadian back bacon as an item. Sometimes we use diced peameal on our pizza too

it looks so good, but I don’t really like 5 guys … because their burgers are WAY to over cooked and dry. Like there is not even a hint of pink … it is solid gray all the way though and that is just overdone

Sous vide thighs then pan fried 1-2 minutes for a very crunchy crispy skin. I made a rich curried cream sauce with the fond for the cauliflower. The bacon wrapped asparagus was cooked in the air fryer and brushed with a little balsamic to finish it off.

Catching up from the weekend.

Friday was Eggs, Cheese, Pork Belly and Vienna Sausage

Saturday was Ribeye, Shrimp, Squash, Zucchini, Cauliflower, and Onion … all cooked on the grill (had to bring out the bigger grill because the food you see was only 1/2). This was intended to be split across 2 days … but will make it 3. On Saturday the wife and I finished our shrimp and a couple of the veggies but didn’t touch the steak.

Which leads to Sunday…

Sunday was 1/2 the Steak, cauliflower, 1/2 squash, 1/2 zucchini, 4 eggs.

After seeing other ketonians eating this I tried some for the first time since I was a kid recently on a road trip, not at all like my childhood memories, gross and mushy! I’d rather eat a raw turnip with mustard on it. :nauseated_face:

@David_Stilley @Jody22 … I grew up and still like both Vienna Sausages and Potted Meat, as my food post often dictate, but have to agree that you do come across some Vienna Sausages now days that are quite mushy, not like they used to be. But the ones with more firmness are better. (We mostly use them for treats for our Pups these days) but I also used to like them mostly on bread with Mustard. (It’s actually one of the few things I enjoyed on bread before Keto.) But by themselves nowadays, I do check them for firmness and don’t find myself eating them as much either.

Ya both know they don’t make things like they used to. :smile: … But the Potted Meat still seems nice & salty and goes very well with Pork Rinds though. :slight_smile:
