Lunch: leftover quiche and a big salad.
Hmmm… the salad was about four times as big as the quiche!
I ordered this with no bun and they made it with “extra lettuce” which was ok.
There is a grilled poblano pepper hiding under the bacon. This was SO GOOD! Hopdoddy’s in Round Rock, TX.
Chinese Pork Ball Soup and
Seared Teriyaki Ahi Medallions
I’ve been working on a keto version of Chinese meatballs, still a work in progress. The flavor is right but I haven’t gotten the binding quite right, still delicious.
The Seared Ahi is leftover from Sunday, it was marinated in a keto teriyaki sauce I threw together and served with some Japanese Yuzu Mayo.
Made the Parmesan crusted chicken again but this time used boneless skinless chicken thighs. Much better this time.
Actually forgot to post my lunch today. Leftover Lunch, of fridge cleaning?
4 Country Sausage patties, 2 Italian Sausages, Cauli-Egg Salad, couple Dungeness Crabs and couple squares of Lindt’s 90% Dark Chocolate and 4 Brazil Nuts.
When I got home, someone wanted me to crank up the grill. Started with Burgers, (too many really) Fames were a jumpin’! So removed some and then added some knockwurst and ham.
Then made meself a plate. Wife made me a Salad too, but the meat said Nuh-uh, so I didn’t eat it. Will save it for tomorrow though.
… 2 Burgers with Provolone and Sautéed Mushrooms, some Bacon, some Ham, 1 Knockwurst, and of course, Pickles and Olives. (Fork optional
)
@Keto6468 I think this is the same as the one on the left burner. I picked up mine in thrift stores.

I was too tired to post this last night when I ate it, but I finally had to try the chicken bacon ranch casserole that people have been posting pictures of. My picture isn’t nearly as pretty as the others, but damn it was tasty. Not pictured is the Rebel peanut butter fudge ice cream that I ate for dessert.
Hi @David_Stilley (or perhaps @Full Metal Keto ? Not sure, sorry!).
That makes sense, of course. What we have where I live is halloumi, which I adore. It’s with mint, however, so while it’s scrummy on its own, it wouldn’t go with every dish as an add-in. But I appreciate you tying it in to the other cheeses which are brothers by a different mother J. What you describe as farmer’s cheese is very much paneer, something I tried making once and goofed up, but as I know what I did wrong, I think I’ll try again. Fried cheese with a squeeze of fresh lemon. Does anything beat it?!
Luscious! And thank you for making me realize that with keto I can re-examine that fancy ‘sauces’ cookbook I’d bought and drooled over, but pretty much put to the side thinking “ohhh, damn, is everything with cream and butter?”
Cream, butter, and drippings, here I come? J
Oh, and by the way? Even although it’s only semi-related, ever tried leeks baked in heavy cream? Amazingly delicious, but also tucked aside as being ‘sinful’ previously. I think I’ll bake some up and tuck some small amounts in the freezer for future rainy days!
And the day after, I’m no longer sure the taste was worth it. I probably just need to eat way more spicy food. Also wondering if my stomach would have handled it better with rice…
Diced beef heart cooked in the slow cooker overnight then scrambled with three eggs and topped with homemade mayo.
