Look up a recipe for bacon Brussels gratin - bacon and cheese make believers out of just about any sprout hater. I served these throughout the holidays, and had to make more for us at home because there were never any left-overs.
For any of you avoiding grain/veggie oils, ask if they actually have butter. Our GC only has margarine. We take our own butter.
Aebelskiver
Aebelskiver means “apple slice” in Danish. These usually have a berry or cooked chunk of apple inside. I didn’t have any berries so I made them plain with cinnamon and nutmeg. The dipping mix is erythritol and cinnamon. They’re like a cross between a donut and a pancake. I made these with coconut flour. Low carb and egg based. They came out great, first time making them without wheat flour. I used to love making them with sourdough, non traditional but delicious. Perhaps you’ve seen this type of pan and wondered what they are for.

@DiMo I’ve been considering this but I really thought it might be egotistical and not many folks would really be interested.
Anything that gives me data regarding tried and true recipes is DEFINITELY welcome. I’d be surprised if others didn’t like it too. FYI- I really like @Digital_Dave’s recipe thread.
I’ve been thinking about starting my own thread, not necessarily my own recipes, but one that provides links to recipes I have had success with and any modifications I make.
I haven’t proceeded because I’ve been eating more simply lately. I do think it’ll happen someday.
I actually had the same thing happen the other day with a americano with hwc. They forgot the sugar free vanilla I asked to add and it was totally fine.

I have to say, I do like the pans. … I’ve been using the muffin pans lately too, and plan to do some more.
@rhltechie got me hungry for spinach/artichoke dip the other day, so today I made some. I’ve already decided on two improvements - sodium citrate so the cheese is really gooey, and more cheese. I used 1 cup mozzarella, 2 cups smoked Gouda (personal favorite), and 4 oz cream cheese, along with sour cream (3/4 c?) & Mayo (1/2 c.). HEAVENLY.
In the background is cabbage stewed with diced tomatoes & green chiles.
Lots of omelettes lately. And for some reason really craving/enjoying verde salsa. Not sure what that’s about.
This is the real Thai deal. So tasty, but I had to take a break to let it cool down a little. I don’t like hot food, not even when it’s spicy. Been a long time since I last had Thai food.
A big ole plate of green! not very pretty but tasty! Roasted broccoli and kale with lamb mince. It’s the first time I didn’t pour ghee all over my dinner…i kinda missed it!
…had a little snaccident with the rest of my pepperoni chips after dinner too…
I know this is redundant, because I always get the same thing, when I go to Longhorn Steakhouse, but at least it’s not as redundant as @x-Dena-x’s egg plates, since I only go there once in a great while. At the very least, I got some different angles on these shots.
