I used to microwave my bacon as well! Love it! It’s so crispy & lovely but, my husband is all about baking it. It takes longer but, I’ve reluctantly grown accustomed. Sometimes it’s not quite crispy enough so I spin it for a min or 2 behind his back :shushing_face:

I’m headed to grab a doppio then off to the grocery store first thing in the AM … I’ll be fully restocked before he even wakes up lol.

My bacon nectar supply has spilled over into 3 separate containers at this point. Some much nectar, so little time :tipping_hand_woman:

Made a type of lasagna today. The bottom layer was a modification of pork rind bread. The middle layer was a combo of ground beef and Italian sausage meat. Topped with as much mozzarella and manchego I could fit. BOOM-SHAKALAKA!
Next time I try it, I will make the bottom layer thinner. Other than that, the flav profile was perfect!

I have been trying to find a way to enjoy “lasagna” for a few weeks … tomorrow night I am going to add julienned sauteed cabbage in place of the pasta. I hope it tastes as good as I imagine :crossed_fingers:

He absolutely loves to have some scrambled eggs on top of his raw meat, and the Bulgarian yoghurt I make too, he goes crazy for that so I have to share :joy:

I had a great “dump” soup for dinner tonight.

I live in a retirement community that provides breakfast plus one other meal. Today, I ordered to take home:

  • Philly cheesesteak, no bun, extra meat, extra onions and peppers
  • Asparagus and red bell pepper veggie side

I combined those in a microwave safe bowl with other leftovers and ingredients I had at home:

  • Small leftover filet mignon
  • Leftover oven-roasted cabbage steak
  • Rao’s Alfredo sauce
  • Rao’s Marinara sauce
  • Two slices of Sargento Colby Pepper Jack cheese
  • Italian seasoning, black pepper, smoked paprika

Took about 5 minutes in the microwave, with several intermediate stirs.

It was great, but some sauteed mushrooms would really have pushed it over the top.

I cook up a ground turkey or chicken and mix it with a variety of veggies a couple times a week to mix with my pups regular food plus every time I cook eggs they get to split one. Now that I’ve discovered the glee they get from a piece of bacon, I’ll be making them a portion each time too lol. Lately I’ve been getting them some plain fancy Greek yogurt and I put a spoonful on top just because one of them loves it so much and I like to hear the slurp sound he makes when he eats it first thing. I should record it.
I’ve caught the boyfriend eating spoonfuls of the cooked food a few times :shushing_face:

Ok, so it’s Keto Saturday again, and V decided to cook up some meats.

So yep, had some Bacon, Eggs, Sausage (Links and Patties) and a glass of Milk. & 3 Brazil Nuts. … Not sure why my food had to be separated today though? Maybe they weren’t getting along while in the kitchen? :smile: Hopefully they fair better afterwards. :crazy_face:

This is how I shop now, still weird to me after more than half my life as a vegetarian. Hiding under all that beef are two packs of bacon. Turns out I eat bacon once and then it’s all the sudden all I want to eat. I still haven’t done beef but I’m going to try beef and broccoli for dinner tonight on account I got all these little steaks on special for $2 a pack. Also the grocery had big packs of chicken drumsticks on sale BOGO. After having chicken breasts I have decided that dark meat is the way to go and I don’t understand why the inferior (white meat) chicken is so much more expensive, lol. Clearly the legs and thighs are the best part.

My husband attacked it before I could take a better photo… he said it was great.
Pizza roll
Roll: 3 eggs: separate yolks from whites, beat whites until stiff and set aside. Next beat the yolks until fluffy and light, add 3 tbps of ground almonds(or any other ground nut) and then fold in the whites. Spread on baking paper and bake at 175degrees C for 12 minutes, remove from the oven, flip on a new baking paper, remove the “old” baking paper and roll with the new baking paper into a roll and let it cool, rolled.
Unroll, fill with desired fillings (sauce, cream cheese,cold cuts, cheeses, tuna, veggies, salmon, etc, whaever your heart desires), roll and return to the oven for about 15 min or until the cheese melts.

Dave, putting in place your suggestion of having a higher calorie keto meal to prevent any snacking. So for lunch here is 6.75 ounces chicken breast with skin, 2 thick sliced bacon, two eggs, keto muffin with 1 tablespoon almond butter, pickles. 850 cal and lots of protein and fat. Very low in carbohydrates. Let’s see if this will budge my weight. Not happily full, too full

After all the keto friendly indulgences from the last 24 hours (3 keto caramel slices, cheese, meatloaf, cold cuts, cava, double cream, more meatloaf, countless pieces of Montezuma’s :joy:), I wasn’t particularly hungry for this tuna mayo and avocado, but I’ve got a nice little energy kick from it which I think is what I needed. I ate half and put the rest in the fridge for tomorrow :blush:

If you don{t mind a little bit of work I HIGHLY suggest for you to use the gnomgnom keto tortilla recipe. I double the amount and roll it out into a large sheet (maybe 1-8 in thick). When I tell you my 15 year old is asking me “why I am eating lasagna (pasta)”, you got a winner!
