Lunch was fairly lean meat with my eggs and bacon. Increased my protein, decreased my fat, crushing the carbohydrates. Opted to put the bulk of the protein into lunch, as I have a little bit of reflux and inability to digest meat quickly. Hope it works.

I made beef and broccoli. I’m new to steak cooking, it was a bit chewy. I don’t think my pan was hot enough, didn’t get any sear. Not even sure this apartment stove can get hot enough to sear properly. It has good flavor, but took some work to chew.

Also made lemon cheesecake truffles. Wanted a dessert but not chocolate. They are so good, I put in extra lemon because spring makes me want citrusy things

I just checked, but apparently didn’t add it to my Recipe Thread? … But basically we cooked the meat as we would for regular Lasagna, we use Rao’s Sauce. But instead of Lasagna Noodles, we put the cabbage in layers, but we did pat it dry after boiling. And the wife also removed the thick veiny center, so to just use the leafy part. … So we placed a little sauce on the bottom, then a layer of meat sauce, then a layer of Ricotta Cheese, then the de-veined Cabbage and repeated this all again, and topped with Mozzarella Cheese, and also some shredded Parmesan which helps with browning. … Also had Mushrooms and Onions added in on the larger one, (In the meat mix) but left those out in the smaller one, since the wife doesn’t like them that much. The cabbage did well as a replacement.

Spent a nice Spring day working out in the yard finally. :+1: … Came in and ate a hardy meal.
Had a Salad, Sm. Bowl Chili, Sous Vide Top Sirloin Steak with Mushrooms, Roast Beef and some leftover Turkey Salad. Also had some Pickles and olives.

Back to tracking my food today after a couple of days off…I find if I not worry about my macros for a day or so it feels like a cheat day withouy having to have one! :joy: tuna mayo, avocado, olives, eggs, pepperoni chips and a dollop of mayo with a nice cuppa tea for lunch :blush:

You got that right! And the reason that breast meat is more expensive is because it was pounded into everyone’s heads for so many years that low fat is a healthier way to eat and old habits die hard, many people have just gotten used to the idea that dark meat will make you fat and cause cholesterol buildup. The myth lives on…(to our advantage!). :cowboy_hat_face:

Cottage Cheese Gnudi with Ragu

Gnudi are a cheese based version of gnocchi. I was playing around trying to get a reasonable keto version because it usually has white flour in the mix. The texture was too soft but they didn’t melt down when I fried them. My very best friend is here from Florida for a few days and it’s really nice to have her here with me for a short while. The process of making these takes a few days but it’s mostly drying them uncovered in the fridge to let a skin form before cooking. This meal I made in memory of our first date when I invited her over for a late dinner after she got off work. :two_hearts:

Breakfast before more yard-work… Eggs, Bacon, Sausage Patties & links, Italian Sausage, Hot-dog. Also drank a glass of Milk and had 2 squares of 92% Ghirardelli Dark Chocolate. (Not shown)

Gave one of my eggs, one Italian Sausage and one Pattie to the pups. Just added it to their plates, that the wife already had them some Eggs and meat

I’ve had gnudi once in my entire life and it might have been my favorite thing I’ve eaten in a restaurant outside of roasted hen of the woods mushrooms. I’ve always wanted to make it
