I am in such a funk today. All I want to do is eat & nap. This is the 3rd (& hopefully last) plate of food I’ve had today. Grrrr.

Microwaved franks with cheddar & string cheese. Side of remoulade & a pickle.

I can relate. Pups woke me at 2am to go out, I never went back to sleep. So yep, a little tired myself. Even took half a day off, came home ate something and just woke back up. … And yep, woke a little craving, so having a ‘smaller’ meal. :smile: - Chili, Turkey Salad, Pickle, Olives and a glass of Milk.

I don’t need studies to tell me that the way my great-grandparents ate did not lead to cancer, diabetes or cardiovascular disease. They cooked with lard and butter, ate bacon and eggs every day and vegetable oils hadn’t made it to the country folks diet in the 1930’s.

That sounds phenomenal! But, I was too lazy to grocery shop today so I am fresh out of basically everything, especially after the way I raided the kitchen today :grimacing: No eggs, no butter, no milk. I am a total shit show currently :rofl:

I don’t have any pictures of what I ate when I got home since I just stood in the kitchen and ate a whole bunch of deviled eggs before putting on my pajamas and plopping on the couch (I live an exciting life).
However, I got super excited to see there were over 40 unread replies to this thread since the last time I checked. It’s by far my favorite topic in here lol

Hmm good point but that is not always true for each individual. George burns smoked between 10-15 cigars a day for 70 years and lived to be 98 years old, yet we know not everyone who smokes cigars will meet that same end. If I were to take that advice without considering the scientific studies behind smoking , I might look at George Burns or other individuals like him and decide to smoke and end up with cancer. He contributed his longevity to cigar smoking. Do you process your own lard like your great grandparents did and make your own bacon? Because I guarantee the bacon your eating isn’t the same bacon your great grandparents ate.

I was out of ribeyes, salmon, bacon, cream and HWC and the car was low on gas. So my day involved a trip to Costco whether I wanted to or not.

I finally dug out a better container from the cupboard for the bacon nectar. I like having it to cook with, but I also like my seriously lazy way of cooking bacon (in the microwave on paper towels), so I’m torn. I’ve tried baking it as a lazy compromise, but I don’t really like how it turns out.

Keto Carrot Cake FTW. Aaron and I are entertaining non-keto folk this evening for dinner and a film, so had to come up with something mainstream. This turned out really well for something I just made up. I didn’t measure exact ingredients but if you want to give it a crack, this is roughly how it went:

Ingredients for the cake:
1 large carrot roughly grated
100g butter
40g coconut oil
2 eggs
1/2 cup cream
2 tbs natvia (50/50 erythritol/stevia blend)
Equal parts almond meal/coconut flour, around 1/3 cup each (I didn’t measure- sorry!!)
1/2 tbsp baking powder
1 tsp vanilla essence
Cinnamon and mixed spice to taste
1/2 cup chopped walnuts

Combine the dry ingredients well.
Melt the butter and oil together, whisk in the eggs, cream and vanilla essence.
Combine wet ingredients well with dry, and carrot and nuts.

In a small square Pyrex dish, microwave the cake until cooked (should spring back when pushed in the centre). Took me about 20 mins but I have a weak as piss microwave.

Allow to cool for 10 mins, then invert onto a cake rack to cool.

Cream cheese frosting:
250g cream cheese, softened in microwave.
1/2 cup cream
1 tbs Natvia
1 tsp vanilla essence

Combine all ingredients well (hand whisk or electric beater) then cut cooled cake in half, cover the inside with half the frosting, then top the cake with the remaining half. A light dust of cinnamon on top makes it prettier.

Nope. But I never quit eating eggs, bacon, butter, salt - everything I was TOLD by the bought-and-sold media was bad for me. For the past 30 years. But I got fat because I didn’t understand how insulin and insulin-resistance works. I am not fat now.

I turned 60 in January and I have to scribble in large letters on doctor’s forms NO MEDS!!! as I don’t take ANY maintenance meds for anything. A rarity at my age. Most my age are taking 10-15 meds every day. Scary.

N=1 so take with a grain of salt. I may be a unicorn but I doubt it. Many on this board have similar outcomes with keto.
