Jalapeno poppers is one of our favorite meals! They’re filled with a cream cheese, cheddar, fresh garlic & chive mixture. I paprika’d the crap out of the bacon … & clearly let them broil a bit too long lol :shushing_face:

Did a shallow bake at 350• for about 15 min of leftover baked chicken, cauliflower risotto mix with asparagus & mushroom bits, cream cheese & jalapeño cream cheese dip topped with plenty of freshly grated parm.

I used one that’s written in Norwegian, and used no egg with a little bit xantan gum instead of the eggs. And I added baking powder. Google translate seems to work on it, just make sure you use dl, not cups: https://meglerfru1.blogg.no/1478545420_lavkarbo__kladdkaka_b.html

Getting some kitchen stuff done on a lay-in Sunday. Replenishing my bacon nectar supply (about 6 inches in this quart pickle jar) - with the lovely by-product of six pounds of baked bacon. Then brunch featuring Gordon Ramsay scrambled eggs and some “by-product” :grin:

Ok, so Let’s Make a Meal went pretty good! :smile: … I will be adding all the recipes for this stuff on my Recipe Thread for future use and if anyone’s interested in checking them out. (So not to write a novel here) … But here is what I ended up eating in total. (Piece-mealed, due to experimenting, and I wanted to eat them while hot. :slight_smile:

(Salami Stackers) These were very good & the favorite for all this morning… - Salami, two Cheeses and Pepperoni. - Made 12 for the 3 of us, 4 each.

(Salami Egg & Cheese Cups) - Salami, Scrambled Eggs, Cheese and Pepperoni (I had 4 of these)

(Ham Roll-ups) - Cooked Ham wrapped around a Polly-O String Cheese, with provolone (I had 2)

Then I drank a glass of Milk, which is the first time for me in probably 2 or 3 months or more?

Also, my little experiment with the Salami Shells for Salami Taco’s went pretty well. Just tried out the shells for use either tonight or tomorrow. But I think they will work well. … Here’s a pic.


You have to imagine these filled with Taco Meat, Cheese and Lettuce/Tomato - with Italian dressing

Cream Cheese was on the menu, but didn’t make in the mix today, since we were all getting full on these. :smile: But yes, Cream Cheese is one of my favorites, and I had plans to use it today.

It turns out there’s a promising restaurant chain, Clean Eatz, I stumbled across trying to resolve where three highly stubborn people might eat after Mass this morning. It was quite a find, low-carb, paleo and protein-friendly chain that seems to be a new thing.

I ordered the shredded beef, which was a little dry. Nothing a little butter wouldn’t have fixed. They were generous in their beef portion.

I highly recommend them.
