Mid-day meal… Eggs, Bacon, Sausage and some Porterhouse Steak, from the extra one I did last night that my Son decided he would rather have some Cod? I know… What’s wrong with him!
But he ate half of it this morning and didn’t want the rest… As I said… What’s wrong with him!
Last night’s dinner. Not laziest keto, because it involved some actual cooking, but definitely #simpleketo. Roasted eggplant (olive oil, salt, pepper, roast @450ºF for 20 minutes) topped with sour cream and an Italian sausage. I nibbled on some Camembert and salami as an appetizer while I was cooking.
I’m totally going to do this tomorrow I absolutely love Kalamata olives and tomatoes and spinach and a little feta on top would be just right
Rump steak with a cheese and tomato salad! I’m drinking vodka sodas tonight…if everyone could wish me luck, that would be great!

So the Wife called in for a Large Pepperoni Pizza tonight… so, I got up and made her one. Not sure if it shows well in the image, but that’s a 16 inch Pizza Pan, so it’s got some size to it. … I had a couple slices myself, and then I also ate My Dungeness Crabs that I didn’t get to last night.

This has a lot of different things in it, garlic, fermented black beans, ginger, Sichuan peppercorns, dry chilies, pickled chilies, Paò Caí with brine, Shaoxing wine, scallions, white onion, Asian garlic chives, rice vinegar, allulose, salt, white pepper and coconut oil. It might just be the best version of this dish I have had…
Don’t you hate it when you’re partway through cooking dinner and dreaming about how great it’s going to come out as you salivate, only to have your pleasure deferred as you see your meticulously prepped plate of spices shatter your dream momentarily sending you back to the cutting board?
I hope the neighbors weren’t listening.
Oh well I finally got to eat after a 10 minute delay. Now I have to clean up the mess outside.
