Yeah, it needs significantly less than something like Almond flour, which is why it’s great for keto. It also means it doesn’t taste anything like as coconutty.
Lunch to break my 42-hour fast. Gouda cheese, baby dills, and chicken liver pâté with some crispy celery. Pâté is from The River Cottage Australia via Leite’s Culinaria. Some small adaptations: I used a bit of red onion, because I had no shallots, some bourbon, because I had no Cognac, and added a clove of garlic, because. Bottom line: That shit is good.
Broke my Weekday Fast at 116.5 hrs. … Had some Sauerkraut, Salad & Sardines.
Then an Hour later, started with some Dungeness Crab and Shrimp. But only ate the Shrimp and one of the Crabs, since I had to get up to sear the Porterhouse Steaks. After eating the Steak I was pretty much done, so put the others 2 away for tomorrow. Also had 2 pieces 92% Ghirardelli Dark Chocolate
Leftover pork and pork sausage with chili seasonings on a bed of baby spinach. Out of sour cream so used my strained yogurt and topped with sharp cheddar
If you believe that there are Boneless wings out there. Then you should believe that I made beef wings out of sous oxtail…
Beef ramen with lots of leftover roast beef, konjak noodles. Shiitake mushrooms, spring onions, goose egg(yes that’s a large bowl) padron peppers and tomato
I’m visiting my parents and they wanted to order takeout from the local Italian place. They generally get pasta dishes with gf pasta (dad has celiacs, as do I, mom finds her trigger finger is worse when she eats wheat!)
So I ordered chicken alfredo, no pasta, with a side of broccoli. Mom did same but with spinach! Both were super duper tasty and pretty darn keto appropriate.
Lovely from scratch sauce and nice plain chicken (I am always nervous Italian restaurants will dredge chicken in flour no matter how it ends up being prepared!)
24 hours into my fast … my husband is eating fried chicken, mashed potatoes, 2 biscuits with butter & honey.
Convince me not to kill him. 3…2…1… GO.
I am so restless that I am now omw to Best Buy. I have been eyeing a new laptop. If I can’t eat I am going to shop like it’s 1999!
Spicy keto slaw. I really took this up a notch this time with extra garlic and sriracha. Absolutely delicious!
It’s gone from being super hot, to blooming arctic here in Adelaide. Which means…soup time!
Made the stock from scratch overnight (actually it’s chicken bone broth) and threw in all my crisper drawer low carb veg. And bacon, so don’t have a conniption @juice ok?
Served with @ketocopy’s cheese bread, lunch came in at just under 9 carbs net per serve. And I’ve got loads of soup for the rest of the week

Lunch today was a meal prepped lasagna I dug out of the freezer which is why it looks a bit sorry for itself! The recipe called for sliced deli chicken but I switched it for corned beef slices instead…so yummy. I obviously had to have my salty, crispy roasted kale leaves on the side because I just love 'em!
Protei/fat bowl cake. Coconut oil, cream, protein powder (ridiculously sweet, but I’ll rather eat it then throw it out just because of sucralose), coconut flour and flax meal. A little too dry, but this was just a lazy experiment. Next time, I’ll add more cream.
Breakfast - onions, mushrooms , asparagus, bacon, and an egg. And all the lovely bacon fat it’s cooked in.
