Haha! It was just as good but, I wasn’t “hungry” tonight so I had plenty of time :crazy_face: I like almost all of my food at room temp so it worked out perfectly.

O.M.G… i think I have either lost my mind or died and gone to Heaven. No picture of course cuz I made it…tried it… and then it was gone like yesterday.

I made what I am going to call…
“savoury cheese fat bomb”

I took 2/3 cup mozza cheese grated combined with 2 tbsp real bacon bits in a bowl and then microwaved till just melted and then stir stir stir till it forms one large gooey mass. And eat!!!
I think next time after making it into a ball…i might roll it into some seasoned pork rind powder…mmmm…

I threw four eggs (blended with cheese) into the slow cooker with a few sliced mushrooms and some spinach overnight and now have a cheese, mushroom and spinach omlette topped with sour cream and avocado for breakfast.

Without realising it’s a thing (St Patrick’s day- who knew? Lots of people but not me!) I made corned beef with a mustard cream sauce. Turned out pretty dang delicious!

Yep! Here you go:

100g salted butter
2 tbsp seeded mustard
1.5 cups heavy cream
A splash of white wine
S&P to taste
1/4 tsp xantham gum (if needed)

Over low heat in a saucepan, melt butter, whisk in mustard. Add cream, whisk briefly to combine then simmer on low heat, stirring occasionally until reduced by a third. Add the splash of wine and seasoning to taste, continue to simmer gently until reduced to a thick sauce. Add xantham gum if you’d like a REALLY luxurious thick sauce- or if you’re too impatient to reduce sauce to a thick consistency (like me…:joy:)

It worked really well, but I think it would have been better had I used a slow cooker with a timer as it could have done with a slightly shorter cooking time. If I keep using it as much as I have been then I’ll invest in one with a timer, or maybe just get one of those plug socket timer things… :slight_smile:

Post-workout deliciousness! This was so good! Keto chilli paired with spinach and crispy bacon and olive/coconut oil mayo! I put the mayo in the microwave to melt for a few seconds - I wanted even coverage on the spinach and it worked perfectly!

Sousvide Cajun Smoked Chicken Thighs

Here you go @Digital_Dave I made these yesterday with salt, liquid hickory smoke, and some Coon Ass Cajun Seasoning. Sousvide for 1 1/2 hours at 155F. I gave them a quick blackening but cut it short because I did it in the house! Noxious fumes. I had veggies planned but was lazy and not too hungry so I skipped it. :cowboy_hat_face:
