My son is “fasting” on carbs for Lent. He adds all the unnecessary drama that is the hallmark of teenagedom but I admire his choice. One of the ways we work around the ’tud issue is we ask him to pick several meals. We plan our meals in advance of every week.
My keto-supportive but non-keto-eating and mad-skillz-in-the-kitchen wife knocked it out of the park tonight. My son choose the meal. As for me,

Roasted a chicken for my boyfriend to feed off of a couple days. I put a stick and a half of butter under the skin, He says it’s good. Served it with a salad. I cooked up some veggie chicken for my salad
I was thinking about a gravy since I have Xanthan gum but is there any other use for it? I saved it since it seemed wasteful to throw it out
@Acnickel Refrigerate, take the solid fat off, use it for cooking or putting on vegetables. The jelly under the fat is great too, you could make gravy with that or add it to something you’re cooking. I am curious if cooking all this meat has you tempted to taste any of it.
So far I haven’t felt the desire to try any of it but this chicken did smell really good while it was roasting. I never was a red meat eater even when I ate meat. When I was a kid I’d eat maybe a bite or two and then give my portion to my dad. When I got older and was on my own I stuck with chicken or fish until I stopped that too. I am liking the fish so far, and I’m curious to see what difference it makes in my health. BF is on cloud nine though because I didn’t cook meat in the house before this, doing it to help his keto success as he seems to need fewer carbs.
I am also having him keep all the bones so I can make some broth for him to drink. Might add some of the juices to that, especially the gelatin. I feel like I need to recycle the butterfat from it too, there’s so much lol
That was A LOT of butter! Chicken when it’s with skin makes a bunch of fat on it’s own. It looks really beautifully done though, perfect browning on the skin.
My St Pattys Party appetizer plate. There were pigs in a blanket (something I generally love) and didnt have a single one, and tbh, I didnt even struggle with it.

Yesterday I took a wrong turn on my way home and ended up stopping in at a little farm where they sell eggs. Someone had mentioned it to me on Fri and I had planned to visit at some point, then my wrong turn took me right past the gate so I went in.
I bought five dozen of these eggs, properly organic and with the chickens literally running around my feet so I could see how healthy and happy they are.
They might have given you more of the good stuff if you asked them to hold the bun.
