Had v. low expectations of this one but it was most enjoyable

I’m on alternate day fasting this week, well that’s the plan anyway, and came out of my fast this morning with this plate of rump steak, lamb leg chops, and belly pork - the pork (as I knew it would take time to cook and that’s something I don’t have before work) went into the slow cooker over night and turned out really nice, but I ate less than half of what was on my plate as I just wasn’t hungry
I was hungry tonight. I ate everything on this plate
Steak, cream cheese, Brussels Sprouts, Cauliflower cheesy mash and zucchini/roast red capsicum salad with Ranch dressing.
No, I’m not hungry anymore…
Yes, he’s fine with my cooking no matter what I cook if it were potatoes, fried rice or keto food. I feel really lucky that we got him past the picky eating thing. He will literally eat anything, which we have to keep an eye on. It was a real issue when I ate carbs like bread and crackers and he was gluten free. He would wait till I was in the bathroom or something and raid the kitchen looking for wheat foods. Now I don’t have to worry anymore since I went keto there’s really nothing in the kitchen anymore for him to binge on.
He may have been having some carb withdrawal yesterday, he was difficult. We’ll see how it pans out over time. Thanks for asking Clare.
It’s nice to dream though, that looks like an awesome carnivore feast.
Was planning a short Fast of 30-36 hrs., but just broke at 25 hrs. since I had some stuff in my fridge at work I wanted to use up. Especially since I’m dropping some stuff come Friday. Namely, Dairy, but also Chocolate and Nuts. … So just had A bag of Pork Rinds (0 carbs), 2 cans Potted Meat (0 carbs), 16 Olives (2 carbs) and last 4 squares 92% Ghirardelli Dark Chocolate (6 carbs) … Not too bad.
My client is very picky but thankfully loves meat and veggies and fruit. However, he has bo impulse control. He will literally eat to the point of vommiting. So we have to strictly regulate him at Program. His parents actually said that they put a lock on the fridge and cupboards because late at night he will go into the fridge and cupboards and eat. They used to find sticks of pepperoni and blocks of cheese hidden in his clothes drawer. He would take a whole block of cheese…eat several bites abd then hide it in his clothes drawer so he wouldnt get caught.
Glad to hear he is enjoying his food! I am convinced based on my own research and experience, that Spectrum kids and adults function way better on Keto or Carnivore then any other diet. A book called “The Brain Diet” is an amazing book i read that talks about using dietary changes to improve brain function… If you ever have a chance to read it…its amazing. Written by a Neurologist.

Sometimes the simplest of meals turn out to be the best! Oven roasted crispy kale with cherry tomatoes and left over beef mince from last night I also had a piece of keto garlic bread.
All day low & slow pork butt with crackling, hallomi fries and a couple grilled baby toms and asparagus.

Yunnan Steam Pot Soup
Qiguo ji 汽鍋雞
The clay pot has a funnel in the middle. The steam blows out like a volcano when it’s on top of a pot of boiling water. The steam condensed into the soup.
The simple ingredients are parboiled chicken legs, Shaoxing Chinese Rice Wine, ginger root slices and salt. I add white pepper after cooking. This is the finished soup after being on top of a stock pot filled with boiling water for three hours.
It’s incredibly rich and flavorful. The meat isn’t totally muck because it’s never boiled but it falls apart and you can eat the cartilage too, it has a delicate crunch and is really good for you. The other dish is crispy stir fried Asparagus with Garlic Black Bean Sauce.
This is my OMAD today. I’m eating more soup! I have gotten on a new thing with green tea. I drank Oolong all morning to avoid the espresso with HWC. I was going to wait till now to have some but I decided to skip it, I got a terrific deal on Matcha Tea today, 4 oz. bags of organic Matcha $3.99. I’m having that instead.
Today’s dinner is buffalo beef taco salad with a side of pickled onions. I don’t like beef but I was craving this and it was very good.
This was an attempt at a mushroom “quesadilla”. You make giant cheese cracker on parchment only you cook it less time so it stays a little pliable. Only I baked the heck out of it and made it super crispy lol. Oh well, now I know to bake it less. It was hard like a taco, so not too bad. I put a little veggie chicken in it too.
That makes me sad, it sounds really good. I ate the whole pot of soup and the asparagus and so good!
