What did you Keto today? Part Deux!
I wish this meal photographed better- because it’s so darn good. Fried riced cauliflower with red chili powder, some fried, previously braised pork belly & a couple of poached eggs.
I fried up some chicken pieces coated in egg wash and seasoned almond flour in coconut oil, served it up with good ole roasted courgettes and spinach fried in butter and a nice dollop of mayo
Chili with bacon! Ground beef and bacon with some diced tomatoes, tomato paste, seasoning! With some cheese melted on top and some sour cream mixed in! OMAD DAY!
Dreary day and did not accept my Wife’s offer to bring last night’s left-overs today for lunch, because I didn’t know if I wanted to anything? … But after sitting here sniffling, runny eyes & ears popping, I decided to run out and grab a bite. And it actually helped some. … So just two double-cheese-burgers, and I actually got two Fish-Filets. (Something I haven’t had since before going Keto) Pretty good. I also pulled out some Pork Rinds and a can of potted meat. (Or I should say, Meated Salt
)
And learned something too. I really like using Pork Rinds to dip out the Potted Meat! Went quite well.
Chicken stirfry with handful of beansprouts & bamboo shoots, 3 handfuls of crushed chilli flakes may have a tad too much although doubt @Gaff would agree. Tasted much better than it looks honestly.
Don’t remember when I last invested so much time in a meal…
I love this noodle recipe:
4 eggs
130g softened cream cheese
Mix in the food processor
3/4 cup phlisium husk, salt to taste. Pulse until combined, let thicken for a few minutes pulse again.
Knead in a mix of coconut / almond flour mix until it stops sticking (about half a cup)
Put aside until you are ready to use it
Dish with the leftover noodles and bechamel. Had to use up my Brussels.
I love how the noodles held up in a stir fry. Wouldn’t recommend to cook them in water though (even if the original recipe called for it)

Still perfectly edible but not how I hoped it would turn out…
I never think about adding spinach to anything because I generally only use food.

@Elle79 and @Wahinewanders I think your wok creations are beautiful and I’ll bet tasty too. I doubt it was too much chili for me Elle, I cooked Sichuan Chinese for a living most of my life.
