Subway salad: Chicken bacon melt 12 inch sub. Asked for double meat 8 slices of bacon, 4 servings of chicken. Asked no bread in a bowl. Lettuce, onions, black olives, pickles. Added mayo and ranch to it. As a tip: ask for the 12 inch in a bowl no bread if you ask for salad you get 6inch meat amount plus a $2 upcharge. I did double the 12 inch meat which cost $2-3 but it’s way way way more meat than you get in their typical salad.

I had one gin and tonic last night, just one (diet tonic) and am so hungover this morning it’s ridiculous.
Enter stage left fathead bread topped with bacon and extra cheese, because it’s the only thing that’ll make me feel human again!

1 C HWC
8 oz Cream Cheese
1/4 C Low Carb Cocoa Powder
1/4 Sweetener (anyone you prefer, we also use the Chocolate Liquid Stevis Drops - 3 eyedroppers full)
2 Tabs Butter
Melt butter and cream cheese in microwave, 30 seconds at a time until soft and smooth.
Mix in sweetener, Cocoa powder.
Lastly, pour in HWC and mix until fluffy.
Dense and delicious.
I don’t have the carb count because it varies depending on your Ingredient brands. With ours it’s about 2 carbs per cup if I remember correctly.
Also, skip the cocoa powder and add 1 teaspoon of Pumpkin Spice mix —it’s our alternate recipe! Takes great in your morning coffee too.

Hamburger on a keto bun. I think it’s safe to say that the keto bun does not behave like a hamburger bun. The meat juices and pickle juices did not soak in, they just ran off.
I call this “Friday Night Decontructed Pizza” Spam ffried in coconut oil over Mozzarella slices with olive oil.
Dinner yesterday
Got back late from my daughter’s swimming lessons, felt hungry but didn’t have anything fresh so ended up using a chicken breast (ugh) but pretty much shoving a ton of ghee inside it and even smothering it all in butter afterwards. Served with roasted asparagus, salmon, and some melted goat cheese and bacon on top of the chicken. Delicious.
Lunch today at Whole Foods
The hot bars for me at Whole Foods are seriously hit-and-miss. The one near my office in Seattle is terrible and really vegan-oriented, not big fans of keto. However I was over in another city today picking up the last snow shovel in the whole store (everyone hated me when I was exiting the store) and there’s a Whole Foods there. Stopped in and found a wonderful hot bar separated a bit from the main hot bar area, if that makes sense.
This might look a mess but it was marvelous. It consists of carnitas, chicken thighs, guacamole, sour cream, cheese and a bit of pink Himalayan salt I blagged from the butcher nearby. It was basically my standard Chipotle meal but much better, and nicely priced!
