Done with my three day fast. Dinner was a chance and red cabbage. My husband also had mashed potatoes. I had a plain salad, and a little blue cheese dressing
Mug muffin for dessert w butter and natural peanut butter
1 T melted butter
2T oat fiber, or psyllium husk or almond flour or coconut flour
1/2 t baking powder
1 egg
Mix and microwave 90 seconds
I must say the oat fiber made it fairly dry and more bread like. You might even be able to put a little bit of Yeast in it for a yeasty taste. Also the oat fiber is finely ground more like flour than Psyillium husk
You kNow I went to a thrift store and bought a small cup for relishes or something that is 3 inches in diameter. I use this to make my muffins in because it makes them nice and flat and if want to cut it in half it works well as a bun or a muffin. I think I could even use it for hamburgers. Or maybe a sandwich. I really liked the oat husk flour. I’d buy it again. They said it’s 3 g carbs, and 3 g fiber. That makes it zero net carbs, but I’d count at least one gram. Some people have said the oat husk flour tastes a little like sawdust. It is drier than the psyllium husk or the almond flour.
I actually forgot to post my meals from today. Wife made me a lunch today, which was leftovers from last night. Creamy Chicken and Mushrooms in butter, Pickles, Olives and some Pepperoni. Also ate some Pork Rinds afterwards…and a couple squares of Ghirardelli’s 92% Dark Chocolate. (not shown)
Then for Dinner tonight, we had a Salad, followed by an Oversized Baked Chicken Breast with some Deviled Eggs and Shrimp. Also a couple squares of Ghirardelli’s 92% Dark Chocolate.
