What did you Keto today? Part Deux!

Check them out on Amazon. They use Erythritol, so they are something like 2 net carbs per bottles. They are not bad, but I also don’t drink them regularly. After drinking mostly water, they do come across sweet, so cutting them helps. … Plus, for those with a sweet tooth, this isn’t always good. Doesn’t bother me really, but I drink one here and there. They sell them at the local Wawa’s, so pick one up here and there. Hope ya like them.

No, not yet. But can’t say I’ve looked either. I still have 1-1/2 bottles, and I don’t use too much. But I will as soon as I use what I have. … Think I’ve read on here somewhere that someone mentioned a Keto-Version? Will have to run a quick search and see if I can find it.

Edit to add… A Quick search found no results on here. But on-line, here’s what came up first…

Might be something to try, or at least to start with and tweak as needed. This is what I like doing most, creating new recipes, including stuff like dressing. You can always make it to your liking, but it also ensures you know what’s in it. If you try it before I do, let me know what ya think. … I still have 2 more Cheese Cakes to make, then start trying to put together what we’re doing for this Christmas? Well, besides the Turkey Breast we pulled out today. … Wife has a 25 lb. in the deep freezer, but with all the Cakes I’m making, we didn’t have room in the fridge, so pulled out just the Turkey Breast for now. - But it’s always fun to make it a little fattier.

We thought of this, but yeah it is expensive.

A “copycat” Big Mac sauce (which I always thought was 1000 island dressing):

  • 1/3 cup mayonnaise
  • 2 teaspoons no sugar added dill pickle relish
  • 2 teaspoons yellow mustard
  • 1 teaspoon white wine vinegar (or white vinegar)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika

My dressing is often just a combination of horseradish sauce, spicy mustard, and spices, so this is pretty similar except it adds the pickle relish for some sweetness.

Pure, though.

After an 8 mile run, some management stuff, and raking the yard, I’d say it’s a good time to make some LCHF recipes.

My middle daughter, and fellow LCHF’er, can’t wait to have this tomorrow.

I used erythritol instead of liquid splenda. Huge difference. Next up? Keto Eggnog

And, finally. Our oven broke on Thanksgiving. How’s that for a surprise? Anyhow, it’s fixed. I’ve had Aldi asiago wedges in the fridge for weeks, awaiting the oven’s repair, which happened a few days ago.

I’ve converted them into a generous supply of snacks. I simply add cayenne and salt to mine before baking.

et voilà!

After a fair bit of testing, we pretty much only use erythritol now.

(Allie) #2668

Steak, halloumi, turmeric mayo for breakfast, just because I can.

I also squeezed a fork into the pic for @juice :joy:

Allulose works great for toffee!

(Allie) #2670

Breakfast followed by a serving of my lovely homemade Bulgarian yoghurt

Shortbread
c. Softened butter
1/2 c. Allulose
Tsp. Vanilla
1/2 Tsp. Salt
2 c. Almond or coconut flour (I used one cup of each)

*Mix butter, Allulose, salt, vanilla together.
*Slowly add in flour. I used a pastry cutter. *Pat into a cookie sheet( jelly roll pan). Score and “sugar” the top.
I then put it in the cold garage for a bit. Another option is to chill the dough before you put it in the pan.
Bake at 325-350
for 20 minutes (I used 335
)… Judge your own oven for heat and time. They should be lightly brown. Cut warm.

You win! My hot water heater went out on Thanksgiving. The only good news was I have a dishwasher and heats water if you select that option. But none of my overnight guests could have a shower. And everything that needed to be hand washed was washed in cold water. Ugh!

What a race to the bottom. My wife’s “stove-top only” cooking skills were tested, (of course she passed) but no hot water? Many years ago, I lived with my brother in a cheap NYC apartment. The landlord regularly failed to pay the oil bill “at the right time” which meant no heat or hot water for the weekend. He did this once when the highs were in the single digits. It was miserable.

Breakfast:
2 cups of ground pork rinds
1 tablespoon oil or melted butter
1 teaspoon vanilla
2 tablespoons heavy whipping cream
2 eggs
This is pretty thick. Place a ball/scoop of the batter in each waffle square and close tightly. It will spread out.
These come out pretty crispy I topped them with a pat of butter and honest syrup’s maple pecan syrup. Ate two of these, and there’s still four left.Yum!

Keto dishes are TOUGH to wash w/o warm water!!!

We had a breaker trip on my backup generator panel on Thanksgiving. Didn’t affect the stove but did the freezer and a bunch of other stuff on that breaker.

Reset it and was ok. Tripped again a few days later. And again. Finally after my husband came up from the basement he could smell electrical burning smell - it was the heater in our 55 gal fish tank that had shorted out! Thankfully didn’t fry any of the fish.

Had an nice mid-day meal today, and may just skip tonight to keep things mixed up… Plus I still have to make a couple more Cheese Cakes today anyway. But should be it for this year.

Fried Eggs, a piece of Grilled Filet Mignon from last night, Sausage Links and Bacon. :yum: … The piece of London Broil the wife put on my plate was cut up for the 3 pups. :dog: :dog: :dog:

(Ashley) #2678

Oooh thank you! Going to try this!

(Sophie) #2679

I might give it a whirl too. I usually just use mayo, no sugar added ketchup and no sugar added sweet relish for my 1000 island dressing.

(Ashley) #2680

This sounds nice too! Maybe I’ll try both!
