Can you give more detail (i’m a novice) I am looking to use more of the ‘interesting’ cuts

What I do is season the oxtail (actually I do this with every meat) with salt overnight. This gets the salt to penetrate the meat.
Heat the oven to 350 degrees
Pat dry and brown the oxtail in some fat. I use homemade ghee.
set aside
Saute some thick diced onions, season with salt, pepper and a touch of chipotle powder. Add a can of coconut cream, add some Vietnamese fish sauce ( I use Red Boat Brand exclusively) and bay leaf. Add the oxtail back into the pan mix well and top with beef broth (homemade if you have any) enough to cover the meat.
Cover and cook in the oven until fork tender. Set aside at least 3 hours of braising. Periodically check for liquid level
I like to strain the sauce when it’s done cooking.
Taste sauce for seasoning.
I do not use too many spices in my cooking, I want the meat (food) to shine. Oxtail is very flavorful on its own. I have done oxtail with curry powder.
If you like heat, you can add some sriracha while you saute the onions.

Mmmmm…oxtail. Have two huge oxtails in the freezer. Brought them back from Wisconsin recently when I visited family. Wish it wasn’t a 1 1/2 day drive home…I’d have bought some of the chicken necks and pork necks that were also for sale at the farm store (from pastured animals).
Oxtail makes the best broth. I usually cook it in a pot of water on the stovetop. Eat the meat/fat and then use the bones to make a super gel bone broth.
I should try the slow low oven roast next time!

I was stuck at home due to rain, lots n’ lots of rain…
Tonight, I had taco salad! Ground beef mixed with homemade taco seasoning and cream cheese on top of a mix of romaine, spinach, and cilantro, with some cherry tomatoes, black olives, cucumber, and avocado mixed in. Topped it off with some grated Kerrygold Dubliner Cheese. For dessert, I had some Carls Chocolate Mousse! I feel so deprived. How can I possibly sustain this way of eating??
