The BEST easiest no carb cheese crisp tostadas, taco shells, chips ever - new version

So my housemate picked up some provolone slices at Trader Joe’s since she knows how much I love making microwave cheese crisps – you know, the ones we use for taco shells, dipping etc.

Imagine my horror when I saw she’d bought the “lite,” lower fat version!

HOWEVER.

I checked the label and saw zero carbs per ounce, so thought I’d try nuking them to see what happens.

Oh my!!! They made the BEST no-carb tostadas, chips, crackers, taco shells, I’ve ever had! They’re thicker, less oily, more like crisp-fried tortillas than anything I’ve tried, and I thought I’d tried 'em all.

Here’s the “recipe”:

Place one slice (or cut the slice into triangles for chips) on parchment paper in microwave. Nuke for at least 30-45 seconds to test (depending on your microwave’s power), then keep cooking in 15-second increments until it’s nice and toasty brown. This way you’ll know the total time for future use. In my microwave, one slice takes 1 minute 35 seconds total.

Quickly bend the parchment in half if you’re making the classic taco shells or leave the slice flat for tostadas.

These are so freakin’ good… my housemate loves them and she’s not even keto.

Next up, I’m going to sprinkle them with various spice mixtures… in my head, I can hear Keto Dude Richard’s famous “Niiiiiiiice.”

PS. These things are great for travel. I stack’em in a tupperware and off I go!

Yes, that’s what I’ve always used!

That’s why I was surprised the lower fat actually worked and even more surprised that it worked better. Main difference is that the full-fat seems to come out thinner and is a bit oilier, but still delish.

I don’t think light cheese is as bad as other light foods, they do reduce the fat content but it’s the protein that goes up in place of the fat and not carbs so it makes it perfect for recipes like this because you can load them up with fatty goodness to enjoy.

There you go!

I just made some little squares with onion powder and sesame seeds to make them more cracker-like. Didn’t have any dip around, so I had to make do with butter. :slight_smile:

I picture this sprinkled with a bit of “Everything but the Bagel Sesame Seasoning Blend” from Trader Joe’s. Yum!

I do something like this, also in the microwave, but using silicon muffin cups instead of parchment paper. They are a bit greasy. I’ll try the low fat.

Yeah, if it’s melted then it hasn’t cooked enough. You want a fairly deep golden color, even close to brown for them to get crunchy. I go by color.

works in oven…just requires more patience :slight_smile:

you can even do it stove top in a pan

prob 350 temp or broiler

i think fancy ppl call the our cheese taco shells/crisps a “tuile” (tweel)

Third time kind of worked. Took over a minute and the microwave was really smoky. Will keep trying. It’s still cheese, so still great. I think I may be slicing the cheese too thick. Also am using full fat as it’s all I could find.
I might try grating the cheese next time and use silicon cups to shape. Thanks for the ideas!
