After looking at a few different recipes, I decided to make something like a peppermint patty fat bomb.
I started with 195 ML of coconut oil (13T)
Liquid stevia to taste
Peppermint oil (or extract would work) (I probably used about 5 drops)
Melted a bit in micro. Put most of it in 12 separate condiment cups.
Then I melted 2 pieces (1 serving) of Baker’s Unsweetened 100% cocoa chocolate with 15 ML (1T) coconut oil. Once it was melted, I added liquid stevia and some peppermint oil to taste.
I was going to put the chocolate in the middle like a reverse peppermint patty, but then decided to combine the rest of the coconut oil mixture with the chocolate mixture and just do 2 layers.
Total nutrition information for the whole batch is:
1788 calories
195g fat
4g carbs
3g fiber
2g protein
Per serving for my 12 cups is:
149 calories
16.25g fat
**.**08g net carbs
**.**17 protein
Evaluation after tasting… I could still taste the “bitter” of the unsweetened chocolate but not in an over powering way (not too sweet at all) and I could really taste the peppermint. My daughter felt the coconut oil was too over powering, but I couldn’t taste coconut oil at all.
