I made one last weekend. It was great. Except I screwed up. I had a brain fart. the recipe called for a cup and a half of mozarrela cheese. I spaced out a cup was 8 oz. I thought it was 16. So I had 24 oz of cheese for the crust. It wasn’t until my wife reminded me what a cup was that I realized …oops. My crust was a little thicker than I had planned on. Oh well. It turned out fine.

Tried my first keto-pizza today… made fathead dough, spread it in the bottom of a cast iron skillet, cooked it for a few minutes in a450 degree oven… ( note to self—don’t preheat the skillet like you do for crispy bottom cornbread… it melts the dough!) I put a thin layer of mozzarella on top of the dough, made the filling out of some grilled boneless pork loin chops and bacon I diced, covered with mozzarella cheese a layer of pepperoni and more cheese. Baked till cheese melted…

Tried a new crust the other day:
My non-keto mother had a slice and said it was the best keto pizza I’ve made. Even better than those I’ve made with a low carb tortilla as the crust. And she asked for a leftover slice the next day…
