A local restaurant used to serve a caramel syrup with their pancakes and waffles. I would be tempted to add a little vanilla or maple extract to the recipe.
I had a problem with Swerve going grainy so I switched to Allulose and it worked great.
Nice and thick and better than any store bought caramel sauce. A nice squirt of 100% coco drizzle on Keto French vanilla ice cream finished our cheese shell taco meal nicely.
Keto Caramel Sauce
1/2 cup Allulose
1/8 cup butter
1/4 cup heavy cream
1/2 tsp vanilla
Pinch of salt
Place Allulose in a saucepan over medium low heat and melt stirring constantly until light golden brown.
Stir in butter
Stir in cream
Stir in vanilla & salt
The mixture is now a thick caramel sauce that will stay very thick when refrigerated.
