Would love it if one of you guys could write out a recipe for this. How much cream/cream cheese/butter, how long to boil the cauliflower, etc. I’m a cooking simpleton.

Dang, that looks good. I really gotta try that one of these days. But I need an immersion blender. Have been wanting one, anyway, just haven’t put one in the cart at the right time. And it’s not like they’re expensive, I know where there is one sitting, waiting on me, for like $10.

I’ve winged-it every time and it comes out great. If you want an approximate guideline I’d start with 3 tablespoons of both butter and cream cheese for one head of cauliflower. If I need more fat that day I do maybe 1/2 stick of butter and 1/2 stick of cream cheese, salt to taste and a lot of black pepper. All mixed with the immersion blender. Frozen cauliflower works great also. If you use fresh just steam it over medium heat until its very soft and remove it from the pan leaving behind as much water as possible. Thin them with HWC if needed.

I’m currently adding feta cheese to my cauliflower mash… Total taste explosion. (in a good way) :slight_smile:

Allan, what all are you adding? heavy cream, salt, and feta? Along with butter?

Hi, Yes, all of those. Just eyeball the quantities and adjust to taste.

I prefer to cook the cauliflower in the microwave. Cover it (don’t add any water) and cook for around 5 minutes or until soft. I find boiling the cauliflower makes it too wet.
