Made a couple of S.P.L.A.T sandwiches

SPLAT stands for smoked pork loin avocado tomato.

The bread is from Eat Rich Live Well page 134. I had a 6 loaf silicon tray and this sandwich was 1 of those loaves. I grated Parmesan on top of the loaves before they went into the oven.

After the loaves come out, wait a couple of minutes, then turn one out and cut it in half. Put your favorite cheese on one side and butter on the other. The heat with melt each slightly.

Each sandwich has a quarter avocado. I mashed half an avocado in a mug with a fork and added salt, pepper, lemon juice and Dijon Mustard.

This is what it looked like before I put it together.

Each sandwich is about 4 noms.

Are the loaves made with coconut or almond flour?

Almond flour, egg whites and mozzarella are the core of the recipe.

What’s a “nom”?

Is there an acronym list anywhere? I’m acronym-challenged. It took me forever to figure out what kcko meant.

But I don’t know what nom means, I thought bites? :smile:

Oh haha, I didn’t think many people would read that part.

For me, a Nom is an onamonapia for full bite.

I guess I could have listed all 4 Noms in a row for less confusion next time.
