Nice cup of tea and a biscuit (or two)!
Lemon & Poppyseed Shortbread Biscuits
Makes 8 biscuits about 1cm thick and 4-5cm diameter
100g ground almonds
2 teaspoons Truvia
1 teaspoon poppy seeds
lemon zest (about half a lemon but as much as you like)
a pinch of vanilla powder (optional)
- Blitz ingredients in a food processor until they come together.
- Roll into a sausage about 4-5cm across and chill (if you can wait!)
- Slice into 8 pieces
- Bake for 10-15 minutes in a pre-heated oven 175C
Carbs according to the packet of ground almonds I used for 100g so the above quantity.
