Beware, The following recipe is as easy as the 2KD Blue Cheese Dip, and it’s an even steeper, sweeter, slippery slope into keto bliss. Unlike the Blue Cheese Dip, there are no chunks of blue cheese in KCM, enabling out of control ketoers to snort, sip, lap, stir, and smear the substance on a wide range of keto-friendly foods (or partners). Non-Keto family members have been sighted dipping into the container, unable to tell that there’s nothing but Swerve to sweeten the decoction. Authorities caution people to not buy HWC by the half-gallon at Costco, lest there be plenty of ingredients sitting around, beckoning to keto chefs and bakers with the siren song of easy, oozy sweetness with hints of caramel and shades of dulce de leche. Struck with the desire for key lime pie, I set about finding ketogenic versions of the usual ingredients. Sweetened condensed milk was the one I was the most concerned about finding a viable substitute for. I scanned various recipes and settled on this recipe: 3 Ingredient Sweetened Condensed Milk
While I urge everyone to support the above site by visiting, it’s a bit wonky on mobile, so I’ll provide a quick run-down:

  1. 32 ounces HWC (I used the 40% stuff from Costco)
  2. 4 tbs Kerrygold butter (also from Costco, not it matters. @richard and @carl, when is Costco gonna sponsor the forum?)
  3. 2/3 cup Swerve granulated sweetener

Put all ingredients into a sauce pan. Heat on medium-medium high until boiling, stirring often. Watch it closely at that point because it will foam over in an eyeblink! Once it boils, reduce heat to a simmer, stir every few minutes and let it reduce by about 25% (more or less to your taste). It took a bit over a half-hour, but if you use a wide saucepan or even a skillet, it should reduce a bit quicker.

Kate, my girlfriend, has an uncanny knack for detecting artificial sweeteners, but she sampled this throughout its creation and said she couldn’t detect anything out of the ordinary.

I’ll post it tonight, but it just calls for a half cup of Nelly and Joe’s Key Lime Juice (0 carbs per tbs, but I’ll probably call it 1 gm carb), 3 egg yolks, and 14 oz sweetened condensed milk. Mix well, bake at 350 F for 15 minutes. allow to cool, and dig in. According to Kate, using Nelly and Joe’s is important.

One tip for reducing sauces - get a small table fan to blow over the top of the saucepan. That will remove the air that is carrying a lot of water directly over the pan, allowing more evaporation to occur at the surface of the liquid.

Can this be done with sous vide? I am experimenting with all kinds of stuff.

That’s a good question. Can you test a small batch and see? Were you thinking of bagging the mix and putting it into the water bath, or replacing the water in the bath with cream? All I can figure is you’ll need to make sure there’s a way to have the water evaporate off (so sealing it in a bag won’t work), you’ll need to be able to mix it as the butter melts, and you don’t want the cream to scorch whatever heating elements it uses.

Not really sure since I’m going to use my water oven for the second time. I have a Oliso hub with the stainless steel “oven” to go over it. N=1 experience for sure.

:point_up_2: Me too!! Is swerve always a powder like powdered sugar? Or does it come in a granulated form as well? And if you don’t have Steve would it be ok to use erythritol or truvia? Can you get swerve at Costco too? Lol

It comes in powdered and granulated forms. I haven’t seen it at Costco just yet.

Did you used powdered or granulated for this sweetened condensed milk? I think I remember swerve having a slight cooling sensation after eating?

I used the granulated version. Heating it for a while helped it dissolve nicely, but there were a couple spoonfuls that were a tiny bit gritty. I might try powdered next time. I didn’t detect any cooling sensation, but since it was in the fridge, it could have been hidden by the thermally-induced cooling sensation.

This… this is huge.
There’s only one thing I can think of that I do with condensed milk, and that’s make various “3 Ingrediant” cheesecakes (cookies, cream cheese, condensed milk), which sometimes turn into more for various flavors.

In any case, the cookies don’t really matter much to me, but I’ve often thought if it wasn’t for the sugar in the condensed milk, this would be really close to an easy keto treat, since the main other ingredient is just cream cheese. Now the easy cheesecake possibilities have opened up again while staying keto.
